I couldn’t find fideo, so I used angel hair pasta and broke it into smaller lengths. It’s a wonderful dish. Definitely in the rotation to make again.
As I write this comment the morning after, I’m thinking of a poached egg with the leftovers for breakfast.

Good afternoon, this looks so beautiful and flavoursome. It is an easy recipe and we can omit or add some other fish as we are not shell fish lovers at all. Maybe chorizo sausage again or I will think of something else, but it looks gorgeous. A perfect meat for a easy Friday evening meal yet still nutritious. Thank you for sharing I love this. Love it! Even more by adding calamari, clams or mussels, and if feeling really extra: some chorizo! Even if I'm vegetarian 99% of the time! Yummmmmmmmmy!

That looks great. Is it possible to replace the "Fideos" with another noodle? If so, with which one? They are not readily available here.
You could break up spaghetti/capellini into small pieces or use orzo pasta.
I believe Albert mentions elbow macaroni as a substitution for the Fideos, but it's probably true that most pastas would work.

I made this shortly after Albert posted it. Our store didn’t have fideo, so I bought Angel hair pasta and broke it into smaller lengths. I’ll try fideo when I find it, but the dish was excellent with the angel hair pasta. I don’t think I would use elbow macaroni.

Simmer in an open pan for 2 minutes? No disrespect dude, but raw seafood would not cook fully in this manner, unless you're trying to make sushi.
I’ve done this. That broth is HOT! The fish not only cooks in the pan over the medium heat, it also is being steamed while the dish is covered and resting (I usually cover for about five minutes). You won’t believe how incredibly succulent and juicy the shrimps come out. Cook it any longer and your fish will be dry and tough. Try it his way once. You’ll be pleasantly surprised!
Yes, it does work. Today I made his Shrimp & Artichoke Paella and did not follow his recommendation to put the shrimp in immediately after the rice. I waited for the last 3 minutes of cooking, and it was much better. And my shrimp, is a bit larger than what he was using.
