Garlic should not be chopped that thick and cooked slowly in the oil with the red peppers to release the flavours. When you brown the garlic that much, the oil begins to taste burnt and your pasta will taste like it too. Thinly slice the garlic and put on low heat, and let that garlic just simmer nicely in the oil. It's a simple dish with simple ingredients so take your time 😉🤗❤

I may be wrong here but Spaghetti Aglio e Olio is a bit different from what was done here. The garlic should be cooked with the crushed pepper flakes in olive oil (not EVOO as this has a high flash point) up to the point of a slight golden or where you can begin to smell the garlic as anything over that will bitter the dish. Then you need to emulsify the garlic and pepper oil with the salted pasta water in order to better allow the solution to encapsulate the pasta. At the end, you can add a touch of fresh citrus juice and/or parsley for a nice finisher.
Not tryna say u don't cook good bcs that looked delicious.. But the garlic seemed slightly too brown so it might have been bitter.. And as an Italian I have to scold you for putting parmeggiano in spaghetti aglio E olio 😅 other that that yummy 😋
@@emily-gno, infused oil should taste like fresh garlic and not caramelised garlic. Try it, bring in first the chili flakes, turn off the heat, add the fresh garlic and immediately add pasta and pasta water and stir the pasta in.

My Italian chef made this pasta for us after a crazy Dinner rush and I must say the simplicity of it thru me off thought he didn’t put his all in it but when I tasted that first bite trust me when I say one of the best I’ve ever had 😅
When you use high quality and delicious fruity tasting olive oil, you won't need anything apart from the garlic and chili flakes, a bit parsley to pop the color of red chili flakes and compliment the olive oil is fine. Actually the cheese doesn't belong in there but that's personal taste, if I've left over parmigiana I do it too. 😅🤤

Not really. This pasta is made of garlic. Aglio, olio and peperoncino means garlic, oil and chilly pepper
