- All aboard with this creation! This is the perfect kick starter for the holiday season! It took 5 days and 95lbs of dark chocolate to craft this 6ft long train! I love the smoking chimney and the front light!

That steam effect with the dry ice (frozen carbon dioxide gas) is brilliant.
Amaury, would be nice if you did (*another) world tour to showcase some of your skills and
teach others who may never get the chance to move to Las Vegas.
That is until the dry ice started moving down. Usually the train is fast moving relative to the gases it ejects, which often appear as a horizontal cloud of smoke. In this case the train is not moving, which lets the gas settle
So he's in LA? I thought he was in France or French Canada 🤷
@@sweetpealee056 Your comment made me recall, he's not in LA but actually in Vegas (his culinary arts academy is based there - I've corrected it) but I get where you're coming from, his nationality is French, his name is French sounding too.

I don't think I could ever eat anything he created, it's to beautiful to destroy
He should have a chocolate museum displaying his works and showcasing other budding chocolatiers or competitions. It could have a cafe where he sells his delicacies, and a shop where he sells merchandise like make your own chocolate ornament kits. Would definitely be worth a visit.

Yes I believe it is from dry ice
As others say, that looks a lot like dry ice (solid carbon dioxide), it's a very standard way to create an innocuous and "heavy" smoke (basically fog), and would be common in catering / food environment. Falling in sheets on the sides is a pretty good tell.
Probably dry ice.. the working light is cool too!

I am in complete awe. The attention to every detail and addition of all the special little touches is just mind boggling. I know it is edited, but somehow I think his art goes together almost as perfectly as the video makes it seem! And he ALWAYS does it with a smile!
