You can also use rice, corn, potato, or tapioca starch for pulling and it isn't as flour. Or even powdered sugar!

For anyone wondering you can make candy things without a candy thermometer by looking up a guide on line, you will need to get a container of cold water and spoon some your sugar mixture into the water, the texture it turns into in the water will tell you roighly what stage you have your sugar at (won't work if you need a very accurate temperature but you rarely do usually you just need to get it to a certain stage which has a range of temperatures)
I don't have a thermometer so please can you say me how many minutes I'll boil it?????
@@lailajaffer2743that's literally the point. 🤦♀️😝🤣 It's NOT 🚫 about minutes. You could do EVERY SINGLE thing EXACTLY the same and if you use the exact same time it'll be different EVERY SINGLE TIME. It's NOT about time. It's about the STAGE. If you're making soft caramel for sauce ect then when you spoon it into cold water it'll be soft still. If you want something with hard set, for decorating ect when you drop it in the water it'll immediately solidify. If you can say what you're trying to make I might be able to be more specific. But I WILL say that a thermometer costs next to nothing. If you have one for meats you could use that, that's what I did. 😂 But I often make caramel for sauce and it's SO easy to make. I prefer the leave it the fnck ALONE method. 😂 You stir till the sugar dissolves and then.... You LEAVE it. Swirl the pan gently at the MOST. Use a silicone brush or spatula dipped in water to wipe the crystals above it on the edges of the pan. Dip it back in water constantly, every couple of touches. Just don't make it so wet it drip into the caramel. When it reaches a soft golden colour, well hydrated pee colour 😝🤣 Add salted butter, KerryGold is BEST, cream and a little baking soda constantly stirring like crazy and when it reaches the consistency and taste you want you're done. Enjoy. You can store in the fridge for ages and freeze for easy days. 😂 If you freeze a thick sauce you can smash it up into little pieces and scatter over cookies and cakes halfway through baking for a BEAUTIFUL caramel sauce. But it needs to be a really thick sauce. I will make large batches and pour half out thick, freeze that and then I'll use the other half as a thinner sauce by adding more cream and butter. You can even add Bailey's to it after you've added the butter and half the cream, then you just substitute the final amount of cream for Bailey's, and even a little Kahlua. Which just makes ANYTHING with chocolate and or coffee taste SOO fancy 😂 I usually add a little vanilla or a little something something, just add after the first lot of butter and cream when the temperature has been substantially lowered. The same for any colouring you want to add.

In India we use besan (gram flour) to make this and its called 'son papdi'. Its absolutely delicious

Tip: you can use powdered sugar for a sweet taste,and you can also add food colour in the sugar for a coloured dragons beard

I’m just amazed that people came up with this dessert back in the day before modern stoves, thermometer, and machines to powder the sugar existed. It must have taken so much talent and hard work. Whoever came up with the recipe must have been a culinary genius!
There is something thats very similar to this in Turkey. It is called “pişmaniye”. The recipe is fairly different but it looks kinda similar.

You can figure out if you have hard ball sugar by dropping a bit into water and see if it hardens. My mom used to do that when making Italian meringue buttercream

If you bake the flour before you put the candy in it, it keeps the candy warm while you’re pulling it

We call them Grandma's Hair (Rambut Nenek) here in Indonesia. However, we used a bit of lime juice and served them sandwiched between Pink-colored rice paper crackers.

As a person who witnessed many dragon beard candy in the making, this is like seeing someone using the wrong formula but somehow got the answer right.
I made some with my grandma a few years ago and it was really fun, we mixed in some citric acid and sour apple flavor

The trick Is baking the corn starch ( or whatever you’re using ) first. It’ll give you more time.

You can also use a bit of Lorraine candy flaviring oils. My grandkiddos like the cotton candy one but the adults liked strawberry. We wrapped it around a chopped mixed nuts. The crunch of the nut mixture and delicate strawberry was nice.
The kids didn't care for the nuts in the middle.
And I agree with other posters/ comments saying use tapioca starch or even corn starch with a bit of powdered sugar really helps.
My heart goes out to you for spilling that hot water on yourself and giving yourself a second degree burn. A couple months ago I had a cup of water that I JUST POURED from my electric kettle and spilled it on myself as well, giving myself a second degree burn on my stomach.
if you ever have plans on making this again, before folding and pulling the sugar you can heat up the corn starch so the melted sugar wont harden so much 😊

im an ex candy worker and we used to make dragon beard as a holiday special in the witer it would get hard as we made it so we heated up the cornstarch in the oven for 10 minutes so you'l have more time to work with❤

In Indonesia this is a sweet snack that's pretty easy to find in minimarket in individual plastic package, called "rambut nenek" (literally mean 'grandma's hair' in english), with plain rice wafers sandwiched the candy. Back then a lot of grandpa or grandma sold it and street food snack like they served it fresh when you bought it but now there isn't any of them anymore.

You should use powdered sugar for a better taste
You can also test the mixture with cold water once it is combined and comes to a boil then use a spoon and drop a little into cold water. If it comes together as a ball it's finished and if it stays soft keep boiling. We never had any thermometer growing up we had to do it old fashion...

This same thing happened to me! So first try I undercooked it and didn’t have thermometer, the next time I got and I accidentally let it sit too long, and tried to warm it up in the microwave, but ended up burning my finger really badly. I haven’t tried a third time, but I’m about to
