    How to make tempura batter, one with egg and the other one egg-free. Both are light and crispy!
    Both tempura batters were good.
    In the video, I cooked tempura shrimp, sweet potato, kabocha, Shiso, eggplant, enoki, etc.

    even though this is literally my first video of yours, i get immense "dad teaching you how to cook" vibes from this. it honestly makes me want to cry a little because i never had that experience as a kid, so thank you for giving me a *taste* of what it might feel like.

    So, I found your channel because of the comment you left on You Suck At Cooking's Modified Ramen video, and I'm not disappointed! I recall you saying you were studying English, and it's very good. I didn't have a hard time understanding you at any point, and I can only imagine how much better you've gotten in the year since this video was posted. I'd also like to try the recipe sometimes, but things are tough with money at the moment. Thank you for the recipe!

    Very nice! I will have to try making the doughnuts with leftover batter. My mom would sometimes chop bay scallops or shrimp into smaller pieces and mix them with tempura batter. She would then fry a spoonful of the batter to make a fritter. She would also make a soup with leftover tempura. My favorite tempura is sliced carrots or sliced onion.

  • @HQBunker
    @HQBunker Před 3 lety +3

    You made it look so simple that maybe I'll actually try to make it :D
    Question:
    a) how do you judge the temperature of the oil? I know I could use a temp probe, but I'm sure you have a way of telling if it is ready without one
    b) is there anything what haven't been tried as a tempura? I mean in UK there is a like a competition what they can deep fry. Mars bars, Snickers, roast dinner, you name it, there was probably a place that tried it.

    • @japanese1cooking
      @japanese1cooking  Před 3 lety +1

      HQBunker
      You drop a drip of batter and if they come up quickly, it’s good temperature😄 however, it could be too high, no smoke of course. After that is experience... I hate this term. Sorry.
      Think this way. If the temperature is too low, no good. If it’s too high, you get one burnt tempura and a good experience. The rest will go smoother, if you turn the heat down a bit.😀
      I’ve seen tomato tempura, that’s the weirdest. Ice cream also, weird but good!!

    • @HQBunker
      @HQBunker Před 3 lety +1

      @@japanese1cooking try Mars bar, it definitely is an experience :D of lava in your mouth ;P but I think it may not work with tempura batter, I think it would need to be fully enclosed in batter or it will melt in oil.
      Thanks for the clues :D

    Wow, love it! Can you also show a detailed video on kakiage? Is it the same batter, I can't get mine to stay together, it falls apart right away as soon as I put it in the pan, then everything burns at a different rate...

    • @japanese1cooking
      @japanese1cooking  Před 3 lety

      Kakiage, you want to use a ladle. Put sliced vegetables in the same batter and scoop them with a ladle then slide that into the oil😁

    • @japanese1cooking
      @japanese1cooking  Před 3 lety +1

      All beer might be too much, but mostly water some beer might be a good idea!! Alcohol is said to help achieve the right texture for tempura crust☺️

    Very helpful video, thank you! What exactly did you add to batter for doughnuts? Amounts?

    • @japanese1cooking
      @japanese1cooking  Před 3 lety +1

      Thank you!!! I just added wheat flour and sugar to the batter. No real measurement. Eyeball.
      I strongly recommend also adding baking powder. Also, use a reasonable amount of sugar. Sugar and baking powder help air to go out of the dough slowly to keep it from not exploding. Explosion in a pot of hot oil is big danger.
      Always, be very careful when you deep fry something☺️

    Wow thanks for the details!! I always wanted to try making some. Is Tempura batter always dairy free like this? Is this the standard everywhere? Hopefully I can enjoy Tempura even when eating out. I can't eat dairy so i always ask and the staff never knows the ingredients 😔

    • @japanese1cooking
      @japanese1cooking  Před 3 lety

      I have never heard of dairy used in tempura. It’s definitely better to ask the chef, but it would be a very rare case if they decide to add dairy😃

      @japanese1cooking  Před 3 lety +1

      Hello! Thank you for trying my recipe!! Haha, maybe you can add in a bit more flour next time!! Adding sugar(ideally baking powder as well) is crucial for it not to burst in the oil. You don’t want a super messy kitchen and you definitely don’t want to get burnt! Hope all goes well the next time you try!
