How to make Smothered Okra with Shrimp and Smoked Sausage

  • New Orleans Native Charlie Andrews demonstrates how to make New Orleans Smothered Okra. Smothering is a cooking technique used by both Creole and Cajun Cuisines of Louisiana. It involves cooking Meat, Seafood or vegetables in a covered pot or pan with a small amount of liquid over a period of time. We take the Okra along with our Onions, Bell Pepper, Celery and Garlic which has been caramelized. We simmer that in a flavorful shrimp stock until it is cooked all the way down. Then we add our Shrimp and Smoked Sausage. Then we let it cook a bit more and that's it. Hope you'll give this New Orleans Classic a try!

    Hi Charlie, Im a New Orleans native as well and I just wanted to say I liked the tutorial. Another way to decrease the slim from the okra is to put a little oil in a pan add the okra and put it in the oven at 400 degrees for 30-35 mins or until you check and stir the okra to so little to no slim left then add the okra to your stock. doing it that way also alleviates having to continuously stir the okra and you get more orka chucks instead of paste. Great job on the tutorial peace and love.

      +li Meyers Heyyy there my fellow New Orleans native! Haaaaa not a bad idea but I never tried the oven thing for okra! Plus i like a slight bit of the slime in mines! to be honest! lol Thanks so much for the suggestion as it will be a very long time before i ever make this dish again.       lorne gant yes. I’ve tried It with frozen before. It’s takes most of the slime out of It. I like the oven option better.

    yes love me some smothered okra...louisiana girl here but live in Cali but i still cook like the southern girl i am... i add vinegar to mines too to cut the slime and i also add blue crab sometimes ...great job as usual.

    Made this tonight and appreciate the recipe. I grew a lot of okra this year and had made gumbo last week so was looking for another okra dish and ran across this. I cook many things often and especially Cajun but realized I have eaten smothered before but never tried to cook smothered anything so this dish was nice to try.
    Definitely anyone want a good dish to cook up I suggest this one. Everyone loved it and even my brother and he is picky. My wife finished cooking it and she added some chicken bullion and something else though but I am just the prep cook. She did say we will make it again. (Meaning I will)
    Also seen another recipe or 2 of your I am going to try and will leave you comments on them when I do so. Many thanks for the vid and you make good ones. Very concise and easy to understand which is actually rare.

Your advice to make it the day before and serve it the next day was right on the money. I even thought it was better but my brother and wife ate most of it up so I only got 2 more plates of it. My brother was selfish and ate 5 plates. They are saying they want this again so will probably make it one day and wait the next to serve it.

    I’m really enjoying your videos. In my family, we use less okra, and we include corn and stewed tomatoes. I learned to make it with smoked sausage from my grandmother’s sister, many years ago when I was a student at Xavier, but my daddy always made it with ham. They used to call it “Creole Succotash”. It is one of my favorites! Thank you for your wonderful tutorials. You’re a very clean, old school, New Orleans cook. Many blessings to you.

    I think my TV is channeling in my brain...I been wanting smother okra for the last 3 days, I make it my on my own. This recipe is spot on technique is different, I also use chicken wings, I roast my okra to remove the (Rope) we don't call it slime my grandmother from Gibson Louisiana Terrebonne Parish grew okra. But don't get it twisted I can eat your to Charlie I Love Okra!

    Charlie you are the best blessing on you tube for me. I am from New Orleans as well and have been living up in the shitty north for quite a few years, well since Katrina and I love to cook as well but your cooking blows mine to hell. I like watching your videos just to relax and think about being back home in New Orleans. I'm from the Gentilly area near U.N.O. I think you can market your cooking and ship it out, all that needs to be done is continue to build up a client base nationwide, get your packaging right, and the shipping logistics right and basically you would be good to go. You can become the Emerald of the internet New Orleans food shipping. Long as everyone knows that they will have to pay a good price to cover shipping etc...everything would be ok. Personally I wouldn't ship anything less than a meal for two, no point in shipping out a dinner for one Well talk to you later and I will continue watching your vids, and if I can come up with any ideas for you I will be glad to share it. It would be exciting to see you blow up and become a millionaire. Chow.

      Ha ha. That is why you charge more for items that can go bad, over night shipping. Dry ice gotta love it buddy. Well I am making my way back down south, I love the south and my southern people, and the fact that you can get descent food just about anywhere for the most part. Now in New Orleans you can get great food just about everywhere. You ought to do a video on cooking a seafood platter fried and broiled, like Dennie's in BuckTown, they also have a restaurant in the Quarters. Yeah do a video on that with the real shrimp, catfish, fried oysters etc...soft shell crab but when you do this video dont eat it. I want you to wrap it up and send it to me. I will be your first shipping customer. Seriously. Lets get your shipping business started. Dont worry I can re-warm it up just right..LOL!

    Thank you Charlie! I've looked for a recipe like this for years. My mother in law use to make it and taught me how to make it but over the years I had forgotten and she has passed away. The only thing she called it was Okra. So now I have a name. But your recipe is similar to hers only she used a roux. But I think you have taken me in the right direction. I'm gonna try your recipe next and I'll let you know how it came out.

    Hey 👋 Mr Charlie! This is a dish my ex husband use to make. He’s from West Africa and it’s called okra stew but red palm oil is added just few tablespoons. Served over jasmine rice 🍚 it’s very good and spicy 🌶 if you like. Tfs until next time cheers 🥂

    Let me tell you, I made this recipe in the Ninja foodi in 30 minutes and it was GREAT! Threw the shrimp in after releasing pressure, closed the lid and let the shrimp cook in the residual heat for about 6 minutes.Thank you for the recipe. Yes, shrimp stock is a MUST! 😊
