Smothered Okra by Primal Cajun

  • I smothered down 6 gallon bags of sliced okra to use in gumbos and for side dishes. All it takes is sliced okra then baked at 400 for 5.5 hours with the lid on stirring about every hour, Remove the lid for the last 30 minutes. Let it cool and bag it up for the freezer.

    Hey Cajun, I used your method to smother four gallons of frozen okra, It turned out great, I put four quarts of smothered okra in the freezer. I'm waiting for some cooler weather to cook some shrimp gumbo and chicken & sausage gumbo with the okra instead of using a flour roux.
    I read somewhere that dried and ground okra pods makes a great thickner in various dishes. I thought about trying it last year when I was saving seed, but threw the empty pods away after saving seeds. I'm gonna do it this fall. That Choppee okra you gave me a couple years ago makes giant seed pods. Thanks again.

    I planted more than 12 plants this year. Last year I planted only 6 plants & had a decent yield. Our summer in SE NY has been very rainy. I hope I get a lot of okra. First time I had okra ws 1973 in FL. The guy sauteed it with onions & red Bell peppers; LOVE IT...!!!

    My mom cooked okra the same way and threw a couple tablespoons of vinegar to aide in getting rid of the slime. Great Video!

    Growing up my Mom smothered it like you did but would sometimes add tomato sauce and onions to some to use as a side dish. Love it like that just over rice.

    Thank you for sharing!!! I love smothered okra but never cooked it on my own. Always helped my Dad in the kitchen when he cooked it but that was a long time ago. I know how to make a roux so I can finish it from where you left off. I like shrimp, ham, gumbo blue crabs, smoke sausage. Thanks again!!!! I be following you!!!😊

    Going to have to try this. No one else in the house will eat okra raw because the slime. This may be a good option.

    That was a lot of okra, I have never eaten okra, and to be honest i'm not sure that it looks that appetizing 😂but I bet it tastes just fine in the gumbo and as a side. Some day I have to try okra and see what it tastes like. Great video!!

      Yes I do but the old timers used only okra. I have a video coming out in a day or two of shrimp and okra gumbo, stay tuned. Thanks for watching.
