- Salmon pasta is my version of a simple pasta dish where one ingredient is the hero and everything else compliments the flavour exquisitely! A mix of lemon juice, capers, chilli, mascarpone and lemon zest combine to create a little taste of summer, on your plate. @@gaelencarter4804 Thats because its bread lemon, its used to make fruit salad or salty fresh summer dishes like seafood. The rind isn’t sour like normal lemons.

I love this recipe, especially for summertime. 👌 I did tweak it a little bit though and butter poach the salmon, seasoned with just some salt, in the oven to an internal temp of 52c. That way the salmon comes out perfect every time. I mix it in last minute when everything else is ready and off of the stove. That way it doesnt overcook. And I love to add some extra veggies like spinach, cherry tomatoes, ovenroasted bellpeppers (skin removed)... All the good things that come with the summer.

@@vincenzosplate Yes, I did! I was absolutely not disappointed, every ingredients blend so well together. Even the chili add a really mild pleasant spice to the dish! I would love to see your take on pasta with spinach and mushrooms (often also with chicken) in white sauce. Apparently it doesn't really have a special name but I always look for it on a menu at an Italian restaurant.

Hello Vincezo, I'm not a big fan of pasta (I'm more of a rice person) but yesterday I had dinner at an Italian restaurant and I tried this dish.

I already made the dish.
I didn't have salmon, I tested chicken breast and added an onion to the stew.
I loved the combination of capers with chilly and moscarpone, with lemon and water from the paste, which brought the dish to life.
I will test other times with different proteins.
I made this for fun and I like to try new recipes.

Well done Vincenzo! Really good recipe. It differs from my favourite version - I use smoked salmon and a tomato based sauce - but your version certainly tastes great

The way I do it is I don't cook the salmon at all. I basically do everything in this video but without salmon and the moment your ingredients are cooked together I turn off the heat and add shredded salmon. That way it's not cooked all the way through which makes it really moist and tender and generally awesome!
