Foxtail Millet Cookies Recipe Without Baking powder (Indian Healthy Jaggery Biscuits in Airfryer)

  • Healthy millet biscuits are the latest craze in the world of food and this jaggery biscuits recipe is simple. Well, they are packed with nutrients and rich in vitamins, minerals, and fiber. Millet biscuits recipe with jaggery comes at the right time if you are looking for ways to include these ancient Indian grains in your diet. Millets add a powerful protein punch and make an excellent substitute to whole grains for those with gluten allergy.

    1 cup= 235 ml
    1/2 cup- foxtail millet
    2tbsp- sesame seeds (optional/almond flour)
    1/4 cup minus 2 tbsp jaggery
    3 tbsp- solid ghee
    If you seek a vegan millet cookies recipe, then you may substitute ghee with olive oil or coconut butter or even avocados. I believe even nut butter should work perfectly here.
    Let's see how I baked this healthy millet biscuits recipe.
    Whip together fat and sweetener until creamy.
    Sift foxtail millet flour and mix.
    DO NOT KNEAD.
    Add sesame seeds or almond flour or nothing at all. But I tend to pack my bakes with nutrition so I have include sesame seeds in the millet biscuits recipe with jaggery. After adding sesame seeds, you may still add choco chips to make millet chocolate chip cookies with jaggery for kids.
    There are plenty of ways to make each cookie kid-friendly.
    Add all healthy ingredients and then twist it with one ingredient that your kidoo loves.
    Voila! They cannot say no to chocolaty stuff, hai na!? So you can easily make this healthy millet cookie recipe for your tiny tots.
    Q. What millets can be used in this millet biscuits recipe with jaggery?
    Well, I have used foxtail millet, which is also known as Kangu in Odia. You may use any millet that you have handy. These millet biscuits are melt-in-the-mouth and oh so so so yum for a millet lover. I love foxtail millet for its earthy taste though.
    I frequently bake cookies with finger millet or ragi and jaggery. This millet bourbon biscuit recipe is an example.
    Q. How can you make millet cookies without oven?
    Well, you can bake the millet biscuits in cooker or kadahi. Follow the same process as shared in these jowar biscuits in kadahi recipe.
    Q. I am looking for recipes of millet biscuit online. Can I bake all millet biscuits with jaggery and ghee?
    Definitely. Millets make an excellent combination with ghee. But if you wish to make vegan millet cookies, you may try baking with coconut butter or oil.

    Well, try to add more nutrition in your biscuits. Whether you are baking for elders or kids or just to satiate your sweet tooth, pack your cookies with nutrition.       I haven't tried foxtail millet flour till now as I never had idea that we can make cookies with it. After seeing your recent posts.. I am planning to do it.. there is no sun in bangalore to dry out any thing perfectly.. so decided to do tawa roast.. and then powder it.. yes dear, I will try out and let you know.. 🙂

      This time I dried foxtail millet in airfryer. Try that if possible. 200 deg for 10 min...stir and then again keep for 10-15 min..easy and quick..can be done in oven as well

      Well, yes, you may use peanut butter instead of ghee.. however if you use peanut butter alone, cookies might be more like crackers..so i suggest adding 1-2 tbsp of any oil that you use. That will help give crispy texture to millet cookies

      Perfect. You can. However, just remember to keep the dough soft and try not to knead. Better to bake jowar cookies flat or thinner than these so that they come out crispy and crunchy. The amount of flour might vary by 1-2 Tbsp.

      Hi, yes, you can bake millet cookies in microwave convection mode..at 160 degrees celisus..timing might vary...it may take a little longer 2-3 min more in your convection..but try baking for the same time and check if the cookies are done..if they are still too soft to touch, bake then for 2-4 min more

      Well, in that case, you may use any wood pressed or cold pressed oil or a mix of nut/ seed butter and oil. I have a couple of recipes using nut butter. There's one diabetes friendly cookie recipe with almond flour, sesame oil and stevia. Being a diabetic, you should avoid jaggery too

      Dear, I always say not to add all of the flour mentioned in the recipe in one go. Add in small batches.. Little by little so you can reach the right dough consistency.. Each brand of flour behaves differently and might absorb liquid accordingly. I hope that helps.

      You can still bake cookies without oven otg convection and airfyer. you may use cooker or kadahi for cookies.       Well, coconut butter is loaded with saturated fat just like butter from milk. It's an option for vegans or those who want to make these vegan millet cookies. No doubt, coconut butter is yummy.

    Dr khadar always says that millet flour should be soaked for at least two hours for proper digestion. Making cookies immediately is not proper way of eating millets. Can you develop a recipe that can keep the millet flour or millet rava dough for at least two hours?

      No.. I make my own millet flour and dont feel the need to soak it as I always soak millets and often sprout before dehydrating them.
      You cannot make cookies if you soak flour. Make your own flour instead
