  • Millet bread is a great alternative to your regular white bread. This video shows how to make gluten-free, yeast-free, egg-free, flourless millet bread. I have used whole millet to make this bread. Barnyard millet, foxtail millet, kodo millet, and little millet can be used to make this bread. I have tried this bread recipe with barnyard, foxtail, and kodo millet and it was the same results for all mentioned millets. Millets are highly nutritious and you should include them in your daily diet as per the season and availability in your local area.
    Ingredients:
    1 cup barnyard millet
    1/2 cup milk (any)
    1 tbsp white vinegar
    1/4 cup flaxseeds
    2 tbsp psyllium husk
    3/4 cup water
    1 tsp salt
    2 tbsp olive oil
    1 tsp honey (optional)
    3/4 tsp baking soda

      @@anupamakoliyal2500 Add some aromatic seasonings and you will not smell the baking soda. Or add baking powder plus baking soda. You can try my yeast based bread recipes too.

      @@jyotsnaarora8680 we need diluted curd or thin curd plus vinegar. To mask the baking soda, you can add aromatic seasonings.

    Excellent recipe ! It was my second attempt to make gluten free bread. I tried first with buckwheat flour but it was not fluffy. But this one worked like magic. I love millets and to make bread out of it was amazing . Only additional thing I did was whisking batter for 2-3 minutes before baking. Thank you

      @@jd-zf6yr In india we consider 6-9 grains under millet category. Some habe positive benefits and some are neutral. Sorghum is a neutral grain and its good too.

    Best recipe... thanku. I would like to add a point to this. It is always better to soak the millets atleast 8 hrs before cooking. This avoids any indigestion concerns and also helps to absorb other nutrients.😊

    I’ve made this bread twice now and love it! I did, however need to bake it about twice as long as recommended. I looked but did not see anyone else mentioning this issue.Maybe it’s just me? Thanks for the recipe…it’s a great one!

      Time will depend on your oven's temperature. It shouldn't take double time. Please calibrate your oven's temperature that might help.

      @@BroccoliShockley I had a similar issue.I used Foxtail millet flour and reduced the water to 1/2 cup yet my bread was still sticky in the middle. But crust was very crunchy and yumm. I did check the bread half way but poking a knife through the Centre and it came out clean, but at the end the bread was sticky in the middle. Not sure where I went wrong 😢

    I tried this bread today and I must say I am impressed. Many of my GF bread attempts turned out dense and rock like. I like to test how the bread is by lifting a slice and seeing how heavy it is. If its heavy my heart gets heavy. But this recipe is a keeper. When I lifted a slice with bated breath, it was light and fluffy and had the air pockets that one wants in a slice of bread. Thanks a bunch Lochan for this keeper recipe. I Indianized it by adding Indian spices, seeds, coriander and kasuri methi.
    Any suggestions for making this a chocolate bread? Kids would love it.

    just made the bread. turned out nice. i added a spoonful of buckwheat millet sourdough starter. it just occurred to me that you could leave the blended millet out for 12 hours or so to let it ferment for a while. Then leave the dough in the bread pan out for several hours to rise up. ( you won't need to add the baking soda). next time i will try that method. thank you for the recipe...

      I have tried that method too but I wasn’t very happy with that. Then I also tried dosa batter as starter and results were good (dropping a link below). You can use sourdough starter too but that’s not available all the time with me.

      You need to add a variety of rising agents, it could be yeast, baking soda, or all-natural sourdough starter.

    Thank for this wonderful recipe! What changes should I make to ingredients if I want to make this bread with pearl millet? I read in your comments that pearl millet needs more hydration.

      I recommend not to use pearl millet for this recipe. You can use any other millet like foxtail, barnyard, little millet or sorghum. If you only want to try with pearl millet then add about 30 grams saturated fat (coconut oil/ ghee) that will prevent the bread from drying. You would also need to add few spoons more water. After baking let the bread cool down in oven for about 10-15 minutes.

    Hiii ... this is the best recipe so far that I have found, no yeast, no eggs, no sourdough, no xanthum gum or difficult to find ingredients. I just have 1 question. Will this recipe work if I use millet flour instead of whole millet ??

    Hello there, this recipe looks so doable and easy compared to so many recipes on CZcams, thank you. I am beginner in baking, can you let me know if should I preheat the oven? If yes, to what degree and for how much time? I have a IFB microwave convection oven for reference. Also, can I add unsweetened almond milk? Thanks!

      Yes you should always preheat your oven. I do preheat on the same temperature as baking. Yes you can use unsweetened almond milk.

    The recipe looks great. Will try it soon. Just a small doubt - in case I’m using eggs should I mix the psyllium husk with water separately and then mix in the eggs? Or all 3 together?

      Yes you can use any millet. If using eggs no need to use psyllium husk. Also add some aromatic spices to avoid baking soda smell.

      To provide the bread a strong structure as this bread is gluten-free. Gluten-free flour doesn't have much binding capacity of their own.

    Superb receipe. Can't wait to try!
    Just a suggestion if you all don't mind.
    1.Throw away the soaked water. Soaking millets or dryfruit helps to remove the phytic acid (for better absorption of nutrition).
    2.Also, do not cook/heat honey. It can turn toxic. Please research on the time. Vanilla essence would be a better substitute.

    Hi! Looks like a good recipe but I have some questions:
    Isn’t 1/4 cup of flaxseed too much for one loaf of bread?
    Also I generally make one flax egg with just 1tbsp of flaxseed powder and 2-3 tbsp of water. Could you please tell why you have used this much quantity? Thank you

      Because its a gluten-free bread and flaxseeds will help in binding. It won't be too much of flax seeds.

      You can avoid honey as it's in very small quantity won't make any difference in the recipe. I have another millet bread recipe on my channel in which I have used millet flours. You can try that.

      Hi, yes its isabgol. Its helps in binding the bread. If you eat eggs you can add them in place of isabgol.

      Aliv seeds won't work like flaxseeds. You can use gond or any starch.

      Its called sama in hindi. You can keep the bread in fridge for about a week.
