    📙 THE STORY 📙
    Now retired, my dad has over 50 years of experience as a Chinese chef. Everything he makes is SO GOOD. You won't regret trying this recipe!
    Ginger Fried Rice isn't on your typical Chinese restaurant menu. Actually, I had never heard of it or tried it until my wife gave birth.
    In many Asian traditions, ginger dishes are commonly made for newborn moms (like my wife). Ginger is believed to have a myriad of health benefits, aiding in a speedy postpartum recovery.
    This chicken ginger rice recipe is a great place to start, and you can also use different types of meat or vegetables with low water content.
    On top of all of the health benefits of ginger, my dad isn't using soy sauce for this fried rice recipe! Watch to learn how to make fried rice without soy sauce, chili sauce, or vinegar!

    Ginger fried rice is commonly eaten after pregnancy to “heal” the wound too. My mom often cooks ginger fried rice after my period to recover. There are many postpartum recipes in Chinese cuisine. Maybe your dad could teach us how to make soups, and other dishes for postpartum care! Your mom might also know some recipes too!

      My mom made her version of drunk chicken for me after my daughter was born. It's just chicken lot's of ginger and rice wine. Now it's my favorite comfort food. oh yeah I almost forgot the sesame oil. Saute the ginger and chicken in the oil add a bottle of rice wine and about the same amount of water and simmer for half an hour. It's the easiest recipe ever.

      @Bababia you cant eat too much of anything, you need to have the right balance. like the amount of salt and sugar you have each day. you can have that with ginger or even garlic(which is used alot in cantonese cooking) you can put 1-3 slices of ginger in serving of vegetable soup and thats still not even alot.
      theres this new on ginger and lemon shots right now.....i just want to slap my forehead, these companies jsut selling products to everyone and hyping up this consider new herb *wink wink* when it exist in asian culture 1000s of years. sometime i cant stand western society cause how gullible theyre to marketing and advertising.

Organic ginger is much stronger, and because of that I just found out today ginger actually stimulates your digestive tract faster...You can guess how my bowel movements were. Also the organic ginger is overpowering in this case IMO!

    Watching Daddy Lau cook is like having my Cantonese grandmother back in the kitchen again - by the time I was born she didn't cook as much anymore in our household, but she she still did on Sundays and this was how she'd talk to me when I was still a little girl, as I was helping her cut up stuff (badly) and stir things or carry things for her. My mother loves ginger, and I'm temporarily at home with her and my dad (dad and I are recovering from surgery right now but I'm up and about enough to take care of the meals) - so I cooked this for dinner tonight and both parents loved it, and so did I (and I'm not that fond of ginger for the most part!) Thank you for taking the time to document all these precious family recipes. I wish I'd learned more of them from my grandmother, but this brings her back like nothing else does.

    another popular post birth restorative dishes from Taiwan is herbal soups. Both times, my mom came out for a week and cooked for us. She made soups every day, which we were thankful for. I don't know if it actually helped lactation, but it was delicious and comforting. I've gotten in the habit of making herbal chicken soup with whole chicken when my kids are sick. Homemade dumplings and hand-pulled noodles is another restorative dish I like to make for my kids

    I made this with a couple of additions: fresh broccoli that I minced in the food processor, and a small bit of shaoxing wine and Maggi seasoning sauce. It was delicious! The shaoxing rice wine really helped bring out the ginger and added a light, floral note; the Maggi added a touch of savory depth. Thanks so much for the recipe!

  • @MerriesAngelina
    @MerriesAngelina Před 3 lety +1

    Not only cantonese, in fact my family (hokkien), my cousin's maternal family (teochew) mostly use ginger in their cooking, i guess we can say most or general chinese families that still carries on their cultural passed down tradition esp in cuisine, use ginger in most of their food, even drinks. My mom also said that marinating meat with ginger also can surpress their raw meaty smell. I like it when Mr. Lau explain that you can be creative with the dish, only need ginger, egg and rice 😊
    I cooked this fried rice so often as well 😍, i subs the salt with musroom stocks since i prefer it more into bland side so i can eat it with other side dishes 😊
