    Introduction
    Thai food! Big, bold Thai flavours, beautifully fragrant, the creamy red curry sauce is so good you can put anything in it and it will be amazing! While Thai Curry paste made from scratch at home is always the best, it is not always feasible. Red curry paste calls for a long list of ingredients, and it can sometimes be difficult to source a few ingredients. Rich and creamy, this Thai Red Curry has chicken and vegetables. It packs fresh flavors and tastes fantastic when served with steamed rice. Do try this creamy curry recipe & let us know how you like it.
    Preparation of Curry Paste
    8-10 Dried Red Chillies
    10-12 Bird's Eye Chillies
    8-10 Shallots
    6-8 Garlic Cloves (peeled)
    1-inch Galangal (sliced)
    5-6 Kaffir Lime Leaves
    2-inch Lemongrass Stalk (chopped)
    10-12 Coriander Stalk (chopped)
    10-12 Thai Basil Leaves
    For the Meat
    300 gms Chicken (boneless)
    Preparing the Curry
    1/4 cup Assorted Bell Pepper (chopped)
    6-8 Pea Aubergines
    1 Pandan Leaf
    2 tsp Sugar
    1/4 tsp Nam Pla
    1 tsp Lemon Juice
    Salt (as required)
    500ml Coconut Cream
    1/2 cup Water

    looks amazing only thing is i think for much better taste. you should reduce 2 thirds of the coconut milk first in a pan until it splits then add the red curry paste cook for 2 mins add the rest of the coconut milk then everything else. Then you have that beautiful split of the coconut oil from the milk. also add chicken stock if you want to add more fluid.

    Won't the coconut milk get split if you keep it on flame for 18 minutes??? Also will the lemon juice not turn sour while on the flame?

    This is perfect. Unfortunately in western countries... Red curry paste is something you have to buy at the grocery store. Why? Because you can't get the ingredients!

    traditionally the curry paste is made in a mortar and pestle to release the oils from the herbs and chilies, so you dont need to add extra water. If you're doing it in a blender, do not add regular water. use the water that you soaked the dried chilies in. also, traditionally kapi, or thai shrimp paste is used for umami in the paste. a good sub for this is a small amount of crushed dried shrimps like the ones eaten in the south or chingri shutki eaten in west bengal and bangladesh.

    fish sauce and Shripm paste is the main. this is not the perfect one. Kafir lime ke badle Gandharaj lemon ke leaf use kar sakte hai. normal ginger bhi use kar sakte hai. but main khusbu and swad fish sauce and shrimp paste ke upar nirbhar hai. so next next time in dono ko skip nehi karna.

    5-6 kaffir lime leaves to grind 😱😱😱 it will just overpower all the other ingredients and ruin the dish like it did mine😤 can add a leaf or 2 towards the end of the dish
