  • Full written recipe for Green Thai Curry
    Prep time: 15-20 mins
    Cooking time: 25-30 mins
    Serves: 4-5 people
    Green thai curry paste
    Ingredients:
    • Sukha dhaniya (coriander seeds) - 1 tsp
    • Jeera (cumin seeds) - 1 tsp
    • Safed mirch (white peppercorns) - 1 tsp
    • Galangal - 2 inches chopped
    • Fresh turmeric - ½ inch chopped
    • Lemon grass - 2 stalks chopped
    • Lehsun (garlic) - 8-10 cloves
    • Madras pyaaz (shallots) - 3-4 nos.
    • Hari mirchi (green chillies) - 8-10 nos.
    • Kafir lime skin of 1 lemon
    • Fresh coriander roots & stems - 3-4 stalks (chopped)
    • Salt to taste
    Method:
    • Set a pan on medium heat, let the pan heat and low down the flame, add coriander seeds & cumin seeds, dry roast them low flame until they are aromatic, transfer them in a mortar pestle and also add white peppercorns, pound them well to make powder.
    • Further in the mortar pestle add, the remaining ingredients of the paste, pound well to make fine paste, you can also do this step by using a mixer grinder to avoid putting in excess efforts.
    • Once pounded well, you can store the paste in the fridge it stays good for couple of days and stays good in freezer for 2-3 months. Keep the paste aside to be used in making the curry. I’ll be using half of the quantity made, rest can be stored in the fridge and can be used when you quickly want to make the thai curry.
    To make curry
    Ingredients:
    • Prepared thai curry paste (½ quantity made)
    • Coconut milk 1 litre
    • Veggies:
    1. Baby corn - 1/2 cup
    2. Mushroom - 1/2 cup
    3. Broccoli - 1/2 cup
    4. Gajar (carrots) - 1/2 cup
    5. Shimla mirch (capsicum) - 1/3rd cup
    6. Lal shimla mirch (red bell pepper) - 1/3rd cup
    • Brown sugar/regular sugar - 1.5 - 2 tbsp
    • Salt to taste
    • Kafir lime leaves 2-3 nos
    • Thai basil a small handful
    • Red chili peppers - 1-2 (sliced)
    Method:
    • Set a pan on medium heat, add 200 ml of coconut milk, bring to a boil & cook for 2-3 minutes on high flame and until the milk starts to thicken.
    • Further add the prepared green thai curry paste, stir & cook on medium flame until the colour of the green curry paste changes & the coconut milk releases its own fat. This process will take around 4-5 minutes, after cooking the mixture will come together and thicken and the colour of the paste will also darken.
    • Further add the remaining coconut milk to the pan, stir well along with the paste and bring the milk to a boil, stir well so the paste flavour combines well with the rest of the milk.
    • Once the milk starts to boil, add the baby corn, stir & cook on medium heat for 2-3 minutes or until the baby corn is almost cooked.
    • Further add the remaining veggies, brown sugar and salt, stir & cook for few minutes on medium high flame, if you feel the consistency of the curry is too thick you can choose to add veg stock as per your preference.
    • Further add kafir lime leaves, thai basil leaves and fresh red chilli peppers, stir & cook for 2-3, your green thai curry paste is ready.
    • Serve hot with hot steaming rice.

This one was shot prior & it is an amazing recipe. I have worked around the best way possible to make this an Indian kitchen friendly recipe.     I am Thai and glad that you cook thai food. Most of Thai curry are developed from Indian curry. But Indian never said this culture is mine, so different from our neighbor country. Whatever we taught them will be claimed that they are original and we stole their culture. Thanks Indian. You are such a good culture.

    I made this it was too good . No oil used so healthy. I dint have galangal so i used our ginger . Dint use raw turmeric. Still it came out so well. Used home made coconut milk . It's a great keto recipe too. And used lemons from my tree and lemon leaves. Thank you so much 😊😊😊

      @@siddheshgajare4193 both of them are great chefs but like Americans and Australians don't follow Indian chefs as their flavors are different than ours similarly there is no point is us following them. Even if we want to cook foreign cuisines like Thai cuisine we need the Indianized versions according to the availability of ingredients which is very well demonstrated by chef in this video

    I prepared this today for lunch. It came out really well. I tried to order Thai ginger on big basket but wasn't available, so used regular ginger. I also used mixer to grind everything. It turned out exceptional. Basil is very imp for flavour and also the lemon grass. I also added cut boneless chicken. And prepared mango salad and steam rice at the side. I highly recommend this recipe. Many thanks to the chef, we made memories over this meal, my family loved it alot.

    Hello Sanjot, Thanks for sharing this great recipe specifically the Thai curry paste. The most beautiful part of your videos is you make it simple, engaging for even a novice making the viewer wanting to make it.
    I have one question - Is the coconut milk you used freshly prepared? I am asking because freshly prepared coconut milk curdles when heated. Any tips to ensure that coconut milk does not curdle when boiled will be of great help.

    Thanks for the elaborate, authentic version. Just so you know, I've tried your other version (much older) several times, and it comes out great as well. It's simpler, not quite authentic, but still has great flavours and goes really well with steamed rice. :-)

    Perfect! I once tried Tarla Dalal’s receipe when we bought our very first microwave oven and that recipe book came along with that oven. Though I used tulsi in place of basil. Now I know the flavours are very different. This recipe looks very authentic but I won’t find all ingredients in my small town.

    For those wondering about its nutritional value, here is the breakdown:
    You have used 1 liter of Coconut Milk, which is a little more than 4 cups. Coconut milk is a high-calorie food, and 93% OF THE CALORIES COME FROM THE FAT, INCLUDING SATURATED FATS, CALLED THE MEDIUM-CHAIN TRIGLYCERIDES, WHICH MAY HAVE HEALTH BENEFITS INCLUDING, WEIGHT LOSS, BODY COMPOSITION AND METABOLISM.
    Assuming this Curry serves 4 adults, the nutritional content per serving:
    Calories 552
    Carbs: 13 gms
    Fiber: 5 gms
    Vitamin C: 11% of the RDI (Recommended Daily Intake)
    Folate: 10% of the RDI
    Iron: 22% of the RDI
    Magnesium: 22% of the RDI

    Saw this recipe a couple of days back and tried it yesterday, the folks at home loved it and compared it to some of the best Thai Green Curry that they have had. Thank you for the beautiful and simplified recipes.
    Couldn't get the kaffir lime leaves so used the normal indian lime leaves, still have some more paste left for a second batch soon.
    Thanks again for the wonderful recipes....

    You cannot leave out baigan(aubergine) in a thai curry. Aubergine is a must among thai dishes. And, coconut milk has to be made fresh!.

    Amazing explanation given about the ingredients and what they add to the recipe. It may seem very obvious to a lot of avid cooks but some of us find such little notes really helpful. Showing simple things like which part of lemon grass to use or even what role does thai ginger play in the whole dish was super helpful. I like how you stuck to the basic method by using the mortar..I am always on the lookout for readymade thai green curry packets but this one is a game changer..however getting hands on these ingredients is not always easy, so your tip on how I could make a bigger batch and freeze it was a superb one..should we defrost it and then use or can we directly add the frozen chunk into coconut milk while on the pan?

    This is the first time iv seen the authentic version of sautéing the curry Paste with thick coconut milk , which is done to ensure you use less oil.
