this is my favourite dessert, my mom would always make me this on my birthday! i have to make this for my husband....i was born and raised in Belize(Benque) but moved to the US 3 yrs. ago.
My mother made fabulous lemon meringue pies with Borden's Eagle Brand sweetened condensed milk, egg yolks, fresh lemon juice and finely grated lemon zest. The thin yellow rind only. Not the bitter white pith under it.
It's also delicious with a Graham cracker crust, either made from scratch or ready-made from the supermarket.
I like heavy whipped cream topping better than meringue. It's sweetened with sugar and flavored with vanilla or almond extract, then piped onto the pie that cooled at room temperature either overnight or for at least 8 hours.
Being a Belizean myself its always nice to watch and remember these foods. Thanks so much for posting!!!!

As always, I love how easy you make the recipes. I have not made a Belizean lemon meringue in a long time. As I am in the midst of a snowstorm in northwest Indiana, I think this is one I will be making this weekend as I believe I will be snowed in. Thanks for the idea.
Looks so easy... My BF is Belizean and his favorite pie is lemon meringue! I guess he meant Belizean style but he never said so. I know he loves sweetened condensed milk.. so I will be trying this this week!! :)
@phil89k..yes tart is on the agenda. I'm having trouble finding the baking pans though. My mom told me that nowadays in Belize they are making them the size of the lemon pie and cutting them into slices. I might have to do that until I can find the pans.Trying to post a new video every Friday night. Might post one for Powder (powda) Buns sooner though,
Mmmm...my absolute favorite pastry, and it's not easy to find here in the states. The only only lemon pie i eat. Thank you for the delicious recipe.
@ Jcastillo..I learned that recipe when I went to Catherine's way back when. Those Nuns had the best recipes. The only thing that doesn't make the pie taste good was when I tried using that real lime juice in that green bottle. It was kinda bitter. Thanks for sharing my channel with your friends. Much gratitude!!! I have some Castillo's for relatives. Wonder if you're related to them.

This is awesome, I live in Guatemala and travel to Belize (Benque Viejo) really often, and theres no one time I cannot leave without having a delicious slice of this pie. lemon tarts are my favorite Belizean dessert...never had the lemon pie but I wouldn't want the meringue so would I still use the same amount of lemons and condensed milk.

Hi Jcastillo2645 Lol! I use lime sometimes too. Basically whatever my neighbors give me off their trees. I do try to remember to say the temp and time, if not I put it up as graphic during editing. My dad says "If I tell everything, then who will buy the book." lol Truly though I'm not keeping anything a secret, I really try to remember to tell everything.

@jamdown I have Meat Pies up already. One of the very first shows. Yep, I love my kitchen aid. My uncle and his wife gave it to me in 1991. He has since passed in 2002, but my kitchen aid goes strong. :)

@TheBelizeanborn...that just warmed my heart. I can imagine you enjoying lemon pie while snowed in. I have a trade show to attend this weekend and we are expecting rain. The kids have me in the kitchen right now making Powder (Powda) Buns. They know whenever it rains we will have chicken soup and powda buns.. :)
Hi...raspeaker. I get the black food coloring from my dad's store. (Bluefield Products) (323) 231-3030. I don't burn my own sugar. I have used molasses in the past and it comes out ok, but the black food coloring is the better option.
