    "Make it with love." The ultimate go-to for cooking. But, I do think there's more historical data that needs to be discovered about the change in lemons as well as the change in altitudes over the decades because I think those were the biggest issues for its soupiness.

    Intrigued to think about how much has changed over the generations in terms our ingredients. It makes total sense that there would have been smaller lemons a couple of generations ago. They probably had smaller eggs too. I wonder if sweetened condensed milk came in smaller cans or if they changed their product in some way. I have several cookbooks that have really old recipes and I still cook and bake from them occasionally. I’ll be thinking about this the next time I cook or bake from them. Also, like someone else mentioned, there is always a secret ingredient or trick to making things just like mom or grandma made it!

      Yes, times have changed but in general you can tweek any recipe. But you must first get the main ingredients right by measurements and follow directions accurately that includes cooking time.

      Yeah, I usually do this exact same recipe with 8 lemons but the green ones
      I'm not from USA so we don't have the yellow lemons

      @@nn6090 In the US only the yellow ones are considered lemons. The green ones are called limes. I know it's different in some latin American countries though.

    Crazy how the american recipe is different from the french one. In france when we make a lemon meringue recipe, we don’t use condensed milk, we do a mix of lemon juice, egg yolk and cornstarch. We don’t use graham crackers but pie dough. We don’t bake the pie because the lemon filling mix gets « cooked » in the casserole where we mix everything on heat. We just have the use a flame to brown the meringue! So different 😳

      To be honest, your recipe is how it is made in the USA too. This recipe is more of an ice box easy no-bake pie. Like the key lime pie. These types of pie were very popular in the 1950s and 1960s.

      I grew up in the north & moved to the south when I was ready to marry. His mother never used cornstarch but flour. That was so frustrating to make gravy etc with flour but after 30 yrs, finally got the hang of it.😉 Now, I hardly use either. Go figure.

    Your original recipe sounds like my family's recipe. From what I've seen, the soup problem comes from the lemons not being fully ripe (I'm told the ones in stores are often coated in colored wax, so they look ripe, when they aren't) I grow my own lemons now, specifically for that reason.

    One of my favourite pies too make, but i use the zest of two lemons, and the lemon juice with cornstarch. The trick to making lemon curd for lemon meringue pie A lemon curd filling is the base for a lemon meringue pie. You make it with egg yolks, sugar, lemon juice, and zest, and fortify it with cornstarch so the filling holds its shape when you cut the pie For the filling. 5-6 unwaxed lemons. 40g cornflour. 150g caster sugar. 4 large egg yolks, beaten. 40g unsalted butter, diced. Love family recipes 😁

    My family has been making this pie for many years, it's one of the first items I learned to bake at about 6 or 7 yrs old. We do not add extra sugar, we add 2 eggs per pie. Because it has raw eggs, we cook the pie about 15 min. on 350 deg. Bring the pie to rm. temp then chill in refrigerators overnight. ALWAYS. Comes out great EVERY TIME!

    Firstly she should zest the lemons as that's where the flavour is, before the white meringue goes on the filling needs to be cooked, once the topping is on it only needs 5 - 10 minutes in the oven to lightly colour the meringue.

      Ya I think you're right. Maybe Grandma's recipe WAS correct, she just left out that you have to bake it twice. First just bake the crust and filling. Then add meringue and bake a little more till light brown.

    My family makes lemon meringue pie the same exact way as the first try but I get the results of the second pie. The difference is that we use a different pie shell, bake the pie shell first, then add the filling and bake them together and then finally add the meringue and broil it to brown the meringue quickly. I only have to cool it for 30-60 mins at room temperature (refrigerator works even faster) and then it’s good to go. I actually like it more when it’s still kind of warm, lol. 10/10! I literally made this pie just a few weeks ago myself. Definitely a childhood favorite!

    @11:18 they should’ve put the pies in the freezer for 20-30 minutes to cool and set .
    Then make the meringue
    When done they should’ve taken the pies out and topped it with the meringue then set again in the freezer for 15 minutes to cool off the meringue and then place in oven for 5 minutes to brown the top.. or use a flame torch :)
