- This classic lemon meringue pie recipe yields a perfectly set filling and billowy meringue that won't weep--every single time! It's made 100% from scratch with just 10 ingredients.
Note that it’s topped with a SWISS meringue that I accidentally refer to as “Italian” (don’t ask me why, I’m very aware of the differences and prefer Swiss to Italian so I just don’t know where my brain was).

Ingredients
Pie Crust
1 pie dough (click the link to use my recommended homemade recipe): • Secret Ingredient Pie ...
1 egg (for egg wash)
1 teaspoon water (for egg wash)
Lemon Filling
1 cup granulated sugar (200g)
⅓ cup cornstarch
½ teaspoon salt
½ cup fresh squeezed lemon juice
5 egg yolks (save the whites for the meringue!)
1 Tablespoon lemon zest
1 ¼ cup water
3 Tablespoons salted butter
Meringue
⅔ cup granulated sugar (133g)
¾ teaspoon cream of tartar
⅛ teaspoon salt
5 large egg whites
½ teaspoon vanilla extract

Gorgeus cake! That lemon filling looks so sliky ... ! The meringue is Swiss meringue. Italian meringue is made with syrup, but what matters is that pie turns out delicious.

Tried your recipe. I screwed up. I’ve made lemon meringue pie in the past. Most turned out okay, but this time I whisked as you instructed. The egg mix burned into the corners of the sauce pan. The meringue was extra lumpy too. Apparently, the whisk fails to reach the corners. Need to solve that problem, and get back at your recipe again.

I've tried my Granny's recipe for YEARS! It was my absolute favorite, and I never got to perfect it before she was gone. It is literally THE ONLY thing I can't get right. Her recipe uses flour though, my filling is always runny. I am going to try this one, hopefully it tastes similar, I've never tasted one like hers 😅

Great tutorial. I was glad to see you scrape out the filling and the meringue from the bowl. I heard a chef (I can't remember his name.) to treat that bowl like it was your Christmas bonus. It made me laugh, but I always scrape the bowl clean since then.

I love lemon merange pie. I double the merange with merange powder...
I have previously tried 3 pies (different recipe) and in each case the filling has not set up properly and remained runny. I am anxious to try your recipe soon! Do you recommend adjusting anything given that I live at an elevation of 7,200 feet? Thank you!

Looks great and I love the taste of lemon. Why do you add the vanilla extract after whipping the egg whites, why not add before whipping? This will be my first pie of any kind, wish me luck! I love your channel.
The egg whites won't whip quite as nicely/easily if you add the vanilla before whipping. :)
I think lemon meringue pie is my favorite pie. I love how refreshing it is. It just seems lighter than many others. Although French Silk is also up there. But my husband is not so fond of lemon. I look forward to trying this.

Does the lemon filling stay firm and not weepy when stored in the fridge? I have a recipe that I make at Thanksgiving time and my filling always gets watery after a few days. The only thickener in my recipe is cornstarch. Is it the egg yolks that keeps it from getting watery?
I have successfully stored this pie in the fridge for several days without weeping. The trick here is we are using a swiss meringue topping, where most recipes use a french meringue topping. You say to freeze pie crust. Do you then bake it frozen?
I would like to ask a question when you make pie crust do you put in the fridge or the freezer?
It needs to be chilled in the refrigerator. You don't need to freeze it. :)

i usually make lemon chiffon pie, it's a gelatin based pie with similar ingredients but no meringue layer problems!
i want to be able to make one of these without weepy meringue. maybe this breaks the cycle. all my past tries turned into lemon flavored puddles :(

It is the BEST Lemon Merengue pie. Not quick, but well worth it, even to the crust.

In my experience, refrigerating the lemon meringue pie causes the meringue to weep!
It definitely adds to the issue, which is frustrating as refrigeration is necessary.

Well I had high hopes that I would be successful with this but unlike everyone else, the meringue didn't work for me...sigh.

@@SugarSpunRun I'm a disaster in the kitchen...and I don't know why I try as only 1 out of every 10 recipes work for me and I end up feeling bad that I've wasted money buying new ingredients. Actually the meringue seemed quite good until I added the vanilla....just couldn't get those same stiff peaks after that...almost seemed to separate a bit.
You seem to say "Don't zest your lemon too deep". If you hold your lemon and then zest it from the top, you will be able to see exactly how much zest you took off. The way you're doing it now, is basicly Guessing as compaired to knowing. Give it a try and see if it works better for you. Cheers.
