Hard work on the homestead

- Thanks for joining me today at the farmhouse. Today I'll be harvesting some of our first veggies from the garden and making a delicious coffee cake while we talk a bit about hard work and what it takes to reach our goals, whether it be homesteading, homemaking, new skills or simply sports with your kids!

RECIPE:
Grandma's Coffee Poke Cake:
1 box yellow cake mix (just the dry mix, unprepared)
3/4 cup oil
4 large eggs
1 cup sour cream
Filling:
1 cup brown sugar
2-3 tbsp cinnamon
Icing:
2-3 cups powdered sugar
2 tsp vanilla extract
1/8-1/4 cup milk (or just enough to thin the icing)
Directions: Mix the cake mix with the oil, sour cream and eggs until combined. In a well greased baking dish (9x13 works well) add half the batter and smooth it out. Top with the brown sugar and cinnamon and then carefully add the second half of the batter on top of the filling, spreading it completely over the top. Bake at 400 degrees for about 40 minutes. Remove from the oven and while cake is still hot, poke holes in the top and pour over your prepared glaze icing. Allow the cake to set and cool. Enjoy!

Lauren, your message resonated with me for sure. I told myself I want to lose 50 pounds by the time I turn 50 next March. Other than watching my sugar intake, I’ve done nothing proactive. when I grew up poke cakes were very popular and we always used a fork and poked the holes. Congrats on your new family member
That may turn out prettier! lol! A couple years ago I saw poke cakes taking off again on Pinterest but they all had larger holes. Funny how these trends come and go! Thanks so much for watching and sharing that with me!

Happy to say I have been making this cake for 0ver 30 years my recipe is called honey bun cake. The brown sugar, and cinnamon I swirl on top of the cake mix bake them add the glaze. Thanks for sharing

Where do you live? I can’t believe how lush your garden is. We don’t even plant till the end of May. And those cucumbers!
We are in Missouri and it's been a rainy spring (rough drought last summer) and we're so thankful for it! My husband gets things in the garden ASAP in the spring... we get the fever early! lol! Thanks for watching!
