Simple Summer Snacks For Kids | Semi-Homemade Country Cooking

- Today we’re going to make some fun kid snacks for summer! A few make-ahead snacks will help us out on busy summer days ahead with hungry kids. These snacks are semi-homemade and hearty to keep my kids full! We’ll be making protein balls, mini muffins, mini corndogs, granola, frozen yogurt bark, mini bagel pizzas and ham and cheese pizza pinwheels.

RECIPES:
Peanut Butter Protein Balls:
1.5 cups creamy peanut butter
1/2 cup honey
1/2 cup protein powder (I used unflavored)
2 tsp vanilla extract
1 1/3 cups rolled oats
1/2 tsp sea salt
1/2 cup Mini Chocolate Chips
COMBINE everything in a bowl and use a small cookie scoop to form balls. Roll them between your hands in a circular motion until smooth. Refrigerate to set them. Store them in the fridge or freeze them for later.
Homemade Protein Granola:
2 cups old fashioned rolled oats
1/2 cup chopped walnuts
1 egg
1/2 cup protein powder (I used unflavored)
1 tsp vanilla extract
2 tbsp brown sugar
1/4 cup coconut oil
1/2 tsp cinnamon
1/2 tsp sea salt
MIX everything together until it forms a crumbly mixture. Spread out on a parchment lined baking sheet.
BAKE at 350 for 18 min (stir the granola mixture halfway through baking time)
5 min pizza dough:
3 cups flour (+more for rolling)
1 tsp sea salt
2 1/4 tsp. Instant Yeast
1 cup warm water
2 tbsp olive oil
2 tbsp sugar (or honey)
In a stand mixer with the dough hook attachment add the flour and salt. In a separate bowl combine warm water, yeast and sugar until bubbly and sugar dissolved. Turn on the mixer and slowly pour in the water mixture. Continue to run mixer on low and add the olive oil. Blend and knead just until combined and pulling away from the sides of the mixer. Cover and allow to rise for 5 min (longer if not using an instant yeast). This recipe usually makes two smaller pizzas or on every large Stromboli.

When I was a single momma raising my five children they always had Friday night friends over.. I always made the corn dogs as you just did. Also made homemade bread dough or pizza dough and made pizza pockets… the kids that came over had food they liked and knew and my kids always felt normal even when we were on a very tight budget

Omg... I used to make easy stromboli for years when the kids were younger. I just used the Pillsbury pizza dough, jarred pizza sauce, minced red peppers and onions. Soo delicious and I totally forgot all about it! So glad I saw your method, I'm going to try slicing them first before baking 😋

My son and I enjoy an apple with peanut butter in the afternoon. I prefer crunchy peanut butter. Also peanut butter on graham crackers and pb on pretzels. Can you tell we like peanut butter, lol

So good! I’ve made roll ups like that but never thought of as a snack, so I’ll def be trying that! I love making mini muffins and freezing them, and it’s been so long since I’ve made “cookie dough snacks” as my kids call the protein balls😉 I think that’ll definitely be a staple for us this year ☀️

I love a lemon and poppy seed muffin or cake. But more often I have like sourdough cheese biscuits for a hardy snack or simply some fruits.
I think the mini corndogs are a great idea. I have to run to the store to get some hotdogs and I think I'll make those this afternoon. I'm sure my daughter will love them to snack on or in her lunch box for school.

So handy to get in extra protein on pizza night!

Is the granola shelf stable since it has eggs in it? I’d love to make this for my husband and me, but I typically make granola in big batches so it lasts a long time, so I was curious if this would work!
I usually just store it for about a week in our pantry… figure it’s like any baked good that would have eggs. I may have to work on a recipe that would last a bit longer 🤔
