How To Make Fresh Blackberry Lime Cake!

  • BLACKBERRY LIME CAKE ► sugargeekshow.com/recipe/blac...
    8 ounces (227 g) buttermilk (or regular milk with 1 Tbsp white vinegar added) (Make sure your buttermilk is fairly fresh, the older buttermilk is the higher the acidity level)
    3 ounces (85 g) vegetable oil
    3 large eggs
    1 tablespoon lime (About 1 lime)
    1 tablespoon lime juice
    12 ounces (340 g) all-purpose flour
    11 ounces (312 g) granulated sugar
    1 teaspoon salt
    1 teaspoon baking soda
    8 ounces (227 g) unsalted butter
    2 tablespoons all-purpose flour (For dusting on blackberries)
    4 ounces (113 g) blackberries (You can use frozen, but don't thaw them)
    BLACKBERRY PUREE ►
    16 ounces (453 g) fresh or frozen blackberries
    1 tablespoon lime zest
    2 tablespoon lime juice
    1 tablespoon corn starch
    1/8 teaspoon salt
    BLACKBERRY BUTTERCREAM ►
    24 ounces unsalted butter room temperature (You can use salted butter but it will affect the taste and you need to leave out additional salt)
    24 ounces powdered sugar sifted if not from a bag
    2 teaspoons vanilla extract
    6 ounces pasteurized egg whites room temperature
    2 ounces blackberry puree (You can add more if you want to)
    1 drop Americolor electric pink food coloring (Optional)

      Question Liz
      I only have 2 8 inch pans. So since this makes 3 8 inch cakes. Is it ok for me to leave one of the uncooked batter on the table while I bake the first 2 ...?? Then when the baked one have cooled I can take them out of the pan and bake the last third of my cake batter ?? Or would you suggest I fill the 2 pans more full ? Help.. 🙏

      @@jamifitz this cake is good for three, 6” pans or two, 8” pans. You can always do three 8” pans and just make thinner layers and bake for less time if you want! You can leave your batter out on the counter or refrigerate it while your other cakes are baking if you only have 2 pans.

    This looks incredible 😍😍 I’ve used this purée method with your white velvet cake and raspberry, amazing!!! Thank you thank you for telling us more about reverse creaming with Ap flour!!! It worked once with me but never again 😂😂 now I know why!! I don’t love the strong taste and crumblyness of cake flour, so I usually mix it with ap or just use ap alone for my recipes. I’m excited to try this soon!!! ❤️

    Looks yummy! I like that you strained out the seeds. I agree. Totally worth it. It's like you're chewing on wood. If you're open to requests, chocolate cake with peanut butter frosting is the BEST cake ever.

    Omg blackberries! I made blackberry swiss with fresh puree at first and that was a dud. Added in preserve/jam and it helped buy it wasn't quite the way I wanted it but it tasted berry-ish. So hard to replicate will definitely try this recipe out *science of baking* lol

    Hi Liz! Love your recipes! Quick question on this Blackberry Lime cake. You mention in the video you would be using BOTH lime and lemon due to the acidity, however I do not see lemon called for in the ingredients. I am getting ready to make my batter and puree now and will not be adding lemon, but for future I just wanted to clarify. thank you!!!

    Hi Liz! Thank you for all your incredible recipes! I just wanted to give you a heads up that the website recipe conversions (us to metric) are not working properly/converting correctly for the cakes. Some quantities for the flour and eggs are off or show as the same grams for different ounces across recipes. The function that tells us what quantities to make for different tin sizes isn’t working either. Just wanted to let you know cause lots of us are going to your website to get the recipes and to bake.     We have a ton of blackberries growing on our property.....this is the perfect cake to make!! Liz, I make your Easy Buttercream all the time, but I have a question. It always seems to be sooo soft and i sometimes end up putting it in the fridge for a bit to firm it up for piping Am I doing something wrong? Do you have any tips?

    That’s a large amount of frosting for a three layer 6in cake. For a cake that size with frosting swirls on top, I usually use 4 sticks of butter. Are you just making sure you don’t run out?

    Girlfriend, your recipes continue to be crowd pleasers with my super Foodie family. Comments heard are " I could put my face in this cake and eat it from inside out!" Or " I could just eat an entire bowl of this icing" "she's done it again, another home run!" I give u the credit but they don't care because they just want more & more of your cakes. I've made your: Coconut Poke that is rated 10 out of 10. Next is your Strawberry Cake & Icing. Your Box Cake & White Cake. Oreo cake amazeballs. I love all your recipes but these are crowd favorites. This Blackberry cake looks great, I love ❤️ Blackberries so this cake should be another home run here on Long Beach Island, NJ 😘👍👋👋👋

    what if i dont want to add fresh blackberries to the cake, can i make it in cake flour? can i eliminate whole blackberries in between the cakes too and instead add blackberry puree as the filling in between, will it still taste the same?

      I would recommend using my vanilla cake recipe, because this blackberry cake is very similar to it (just with added purée and blackberries). And then use the purée as a filling sugargeekshow.com/recipe/vanilla-cake/
