Blackberry buttercream recipe tutorial

  • Blackberry buttercream
    1 cup unsalted butter (room temperature)
    6 oz fresh blackberries
    5 cups confectioners sugar (pure cane)
    1/2 tsp salt
    2 tsp blackberry extract
    3 Tablespoons ground freeze dried blackberries
    In a grinder, grind up your freeze dried blackberries and set aside. Then blend your 6 oz of fresh blackberries. Use 1/4 cup of the blackberry purée in the buttercream recipe and set the remainder aside along with one teaspoon of granulated sugar mixed in for the drizzle.
    In your blender with the paddle attachment, mix butter and the 1/4 cup of purée on medium for about 5 minutes. Scrape the sides. Add confectioners sugar, salt, extract, and freeze dried blackberries. Mix on low until well incorporated.
