Traditional British "Super Easy To Make" Bakewell Tart

  • Bakewell tart is a classic British pudding/dessert. I cooked this recipe for The Queen at Buckingham Palace, Prince William and Harry at Kensington Palace and it's still in my Eating Royally Catering repertoire today.
    A delicious tart layered with buttery shortcrust pastry, home made strawberry jam, almond sponge and amaretti cookies. Served with custard, cream, ice cream or just a cup of hot tea it's absolutely delicious!

    Bakewell Tart recipe
    Makes 8 portions
    For the pastry
    8 oz all purpose flour
    5 oz butter, chilled
    1 oz powdered sugar
    1 egg
    For the filling
    6 oz butter, softened
    6 oz sugar
    6 oz almond flour/ground almonds
    1 egg
    1 tsp almond extract
    6 oz strawberry jam
    4 oz amaretti cookies
    For the pastry, in a food processor pulse the flour, powdered sugar, and butter until the consistency of fine breadcrumbs. Add the egg and pulse again to form a dough.
    Roll out the dough on a lightly floured work surface to about ¼ inch thick and line an 8-inch tin.
    Preheat the oven to 350F.
    Line the pastry case with parchment and fill with baking beans. Bake blind for about 15 minutes, then remove the beans and paper and cook for a further 5 minutes to dry out the base.
    Spread the strawberry jam over the base of the pastry case.
    Cream the butter and sugar together until pale and fluffy. Add the almond flour, egg and almond extract and mix. Carefully spoon into the pastry case and smooth the surface. Sprinkle the crushed amaretti cookies over the top.
    Bake for about 25-35 minutes, until golden-brown on top and a skewer inserted in the center comes out clean.
    Remove from the oven and leave to cool.

    The best Bakewell Tart I had in England was at a fundraising function for the local church. We were touring the church and picked up a few different things to have later. Everything was made by the congregation. The Bakewell Tart looked so good I took a nibble in the car and we ended up eating the whole thing then and there and went back in to buy the lot!

    Two things about the recipe, Darren: That pastry recipe ratio works incredibly well. My oven is erratic so I've always got to 'interpret' CZcams recipes. Yours worked first time without any alterations. Secondly, using amaretti biscuits is a stroke of genius. I've been making Bakewell tarts for 40 years and never once thought of altering the recipe. But the moment I saw what you did, I thought it was so simple it had to work.
    So, I tried it last night - stroke of genius man, stroke of genius. It's one of those things that's just perfect.

      @@r.d.8172 Absolutely, I interchange my KitchenAid and food processor all the time, when I am making pastry. You could also make it by hand.

    Definitely make this tart with amaretti crumbled biscuits. I don't buy ceramic beans but when I go to the beach, I pick up small, white stones, bring them home, pop them into a pot of water, bring it to the boil and leave to boil for about 20 minutes, that way all bacteria is killed. I store them in a tin, ready for use, does the trick.

    The use of stone fruit jam and almond topping is economical and therefore the type of thing I would actually do.
    The strawberry jam and crushed cookies sounds like a Mormon version of Amerindian berry pie, so the queen had the most traditional way.

    I adore that Bakewell pudding story. It reminds me of the Juicy Lucy in the Eastern USA. There are two shops that both claim to be the originator of the Juicy Lucy sandwich. But no one actually knows which one did it first.

    Wow, I make Bakewell Tarts every Christmas for some of my English friends (and me as well) ...mine are a little different....pastry on the bottom, raspberry jam, almond flavoured cake and when cooled, I spread an Almond Glaze over the top with a half of Marachino Cherry on the top. I am going to try your recipe soon though, for myself and my English roots!

    Dear Royal Chef Darren thank you for sharing this video I love all your videos and wanted to say we have always enjoyed eating these little mini cakes we'd buy from our supermarket in Australia and wondered how they could taste almost exactly like home backed cakes. Then when you mentioned Mr Kipling we saw that those cakes are Mr Kipling cakes we've enjoyed 🎂 🥮 I look forward to baking this recipe:)

    I love the story of Prince Phillip about to eat ceramic beans! hahaha. Lovely video as usual. I'm a British expat in Asia, and I miss a good Mr Kipling bakewell tart with some hot custard! I mean, I can buy it here where I live, but it's usually three times the price and it's not the same as eating them when I was growing up. These videos make my day! Thank you

    HA!! The folded parchment paper trick is something I’ve NEVER seen in 50 years of cooking and baking! Absolutely genius and I give all the credit to you (as well as for this delicious tart! Imagine, being able to make the same something served to the Royals! Thank you, sir!)
