    I use a very big ziploc, kosher salt and buttermilk. Perfect.

      It's the best recipe for an amazingly juicy, flavorful roast chicken from Salt, Fat, Acid, Heat. I tried it with my turkey and it's now my go to.

    When I take innards out i just dry it and dump the Salt in there. Everybody always loves it.

    I've heard that the flavor improves with additional time, up to 3 days.
    Is this accurate or should it not exceed an "over night" brine?
    I have a separate large refrigerator in the garage that's basically empty so it wouldn't be in the way at all.

    Don’t dry brine, not nearly as good. Just go to Home Depot and get a Homer bucket, can hold up to 20lb turkeys. Place in cold place or top with ice.
