Great info. I purchase meat in bulk as well when they are on sale. Bring it home and break the large packs down into meal prep portions before loading them into my freezer. I am careful to select packages that are dry, this was important to share.
Kitchen scissors make this job much easier, in my opinion, and it's more precise which preserves more meat! I also scrape the fat off of the tendon which isn't removed that is on the face of the breast. The fat comes right off of it.

Thanks for this! My chicken prep was messy. I would run the breast under the tap. Thinking that I would have to rinse it and cutting the fat off aimlessly and messy.
From what I hear, it's not recommended because the water can carry bacteria into deeper nooks/crevices in the meat. Studies suggest it's safer to not rinse most types of meat so that you can guarantee you'll kill the bacteria with hear from the pan

All the trimmings from any chicken i cook??...I save them in the freezer for soup...gravy, etc. Lots of flavor in those pieces 😋.

I soak my chicken with the juice of one to two lemons, then just get rid of the excess, it gives it a nice flavor
