Biscoff Mini Cake Slices

Now I'm definitely on a roll with making anything and everything possible with Biscoff because I can, and it's absolutely delicious!
This recipe is so easy, and I made it on Saturday in time for treat day. It isn't too sweet or overpowering and hits the spot so well. Sometimes we all need a snack made from something we love. I love Biscoff, and it's still one of my favourite spreads.
I wonder what recipe I will come up with next.

Recipe below
1 cup melted biscoff (1/2 to go into the cake and the second half on top of the mini cakes)
3 biscoff biscuits crushed
1 cup spelt flour
3 large organic eggs
1/2 cup plant-based butter melted
1/2 cup icing sugar
1 tsp baking soda
Tips
I don't keep sugar in my cupboard and only had icing sugar - but it still turned out amazing!
You don't have to add more biscoff on the top - but I thought it was extra delicious
This bakes for about 20-30 minutes depending on your oven. It's super easy and fast
