DELICIOUS BAKED PASTA (Schinkenfleckerl) with ham or smoked meat

  • Baked ham pasta (also known as Schinkenfleken from German cuisine) are made with ham or smoked meat, which are baked with an egg mixture. Honest ham flecks taste like grandma's, but the smoked meat can also be replaced with salami or English bacon. The best recipe for ham flecks with cream and whipped egg whites, which will soften the baked pasta even more.
    INGREDIENTS
    300 g of raw flecks (pasta)
    300 g of smoked meat
    1 large onion
    2 tablespoons of butter
    400 ml of heavy cream
    5 eggs
    salt, black pepper
    2 cloves of garlic
    fresh parsley
    The procedure for preparing baked ham flecks with smoked meat
    1. Boil the spots in boiling salted water until soft, then drain and rinse with cold water. I use homemade stains, if you have purchased ones, cook them according to the instructions on the package.
    2. Cut the meat into centimeter cubes and finely chop the onion. Start to fry the onion in butter and once it is golden, add the pieces of smoked meat. Lightly fry the meat and then put the pan away.
    3. Separate the whites from the yolks and mix the yolks with the cream in a bowl, add pressed garlic cloves, salt, pepper and chopped parsley.
    4. Now beat the egg whites until stiff peaks form. Mix the drained spots in a baking dish with the fried meat and onion and the cream mixture, and finally, carefully mix in the egg whites.
    5. Preheat the oven to 200°C and bake the ham flecks for 20 minutes, covered and then uncovered, until the surface of the ham flecks turns golden.
    6. Remove the finished ham flecks, let them cool slightly for a few minutes, and then serve with pickled cucumbers or pickled beetroot.
