    Just one comment. He mentions that he is using the same oak he used in the whiskey and that is correct. Using FRESH toasted oak can leave too much oaky influence in your rum. If you have to , soak that fresh, toasted oak in water a few days before adding to the rum. Again , thanks for the video sir !

    We love all your tutorial videos! And I have learned so much from you!
    Personally, when I do wood infusion or what we like to call, fast aging, I use very thin wood and only about 4small pieces, 23grams to be exact per 2 litres. I get good results in just one day. The chips will sink to the bottom when done. Also, By using thin chips you do not lose so much alcohol to the angels share (absorption). Carefully choose your wood. Or your liquor will taste like a table and not 8year old top shelf. Thank you again for your great videos!

      @@hang1893 I'm using a tropical hardwood similar to oak. I don't remember the name of it but I have had very good results with it. How do you know the difference between table and top shelf is that you will taste it. Using a piece of old wood laying on the damp ground probably won't taste very good. However, I recommend you follow the links couredicioccolato provided for a more guaranteed best results.
      You may experiment with different woods, maple, birch, pecan, apple Ect just make sure they are not poisonous . A lot of information on types of wood for aging on the web.

    I made this according to the recipe and added 1 fluid oz maple syrup made by my nephews in New England, USA. You could cut with 1/2 oz water if you want it to be more like a liqueur. Spectacular.

    I did your other whisky only I didn't have oakwood I only had applewood. I added spices and some whisky I had made from RedBud blossoms and Everclear. It was fabulous. I can't wait to try this one. THANKS!!!

      Some stores sell woodchips for fish /meat smokers , if you burn them a bit with a gas torch and then put those in a jar with some cheap portwine for a week,i think it can turn out great, going to test tomorrow ,not sure if it is whiskey or rum that use old port barrels. I will try with water soaked chips and port soaked chips , a trick i learned when making wine , to age it is to fill your sink or a bucket with hot water and place the bottle( with Cork on) in there 20-30 minutes to melt the sugars and your fresh wine will taste like it been in winecellar 1-2 years but only do it to the wine you gonna drink that week,leave the rest of them alone to mature naturally.it s just a tip if you get visitors and only have fresh wine to serve.

    Second, How do you make chicken cacciatore, It was my favorite when I was younger.
    Third, to answer your question: I think the cheap alcohol is in tall skinny bottles to accommodate the bar tender, you fit more bottles on the shelf.
    and it is in the bars where the cheap alcohol is sold.

    Yum!! I think the cheap, white rums are in prettier bottles so people will buy them first... Older runs take time and a lot of money to produce, so I'm guessing the same companies are offering their 'fresher and younger' rums to make some quick profit... They both have their places 😍

    The moonshiners on TV aged their whiskey doing the same method additionally using high and low temperature each day, but i don't know if its getting a better result. I tried the same at home like you and you're right its really really spectacular 😀👍

    I have been aging different alcohols on different woods. Right now I am using pecan, apple, cherry, and hickory. I have been toasting the wood in the oven: 204 C for 15 min then another 15 min then another until I like the color. Vodka mostly. Also there is 100% agave mezcal and like here, rum on hickory. One bottle is vodka and oak for nearly 3 months now. Where did you get the 1 day equals 1 year, experience? Keep up the great videos!

    Ciao. If I may suggest - 25g of „fresh“ wood is not enough. I’ve put approx. 30g and the taste was much better than the initial pure product but still not enough at least for me. On the other hand, vanilla flavor and smell was already fine so I suggest to increase a bit the amount of wood. If the final product would be too strong, one can add some initial pure product to achieve perfect mixture. That’s how some expensive blended rums are made. Anyway, great video and channel! Grazie.

    I have a still,i do a nice coconut rum ,my favourite is a pineapple coconut rum cocktail,place pineapple in blender add coconut rum and ice,serve in tall glass with mint leaves,i just add coconut essence to the rum🙂👍

    I make a Vanilla Extract with Vodka or Bourbon by putting 6 or 7 vanilla beans in a mason jar, filling it with cheap vodka or bourbon, cover with wax paper (to avoid contact with the metal), cover and shake once a day for a few months. It works magnificently so I was wondering if I could do this method for the alcohol first and get an even better product but I’m not sure what type of wood is good for Vodka or Bourbon. I like the vodka because it is a more neutral taste and the bourbon works well with any kind of baking flavor. I’m not sure about rum. It’s also very strong and not neutral. Any ideas about wood for vodka?

    This is a nice idea, if you are making only enough for personal use at home(?) 90 years ago my mother used to smuggle rum when it was prohibited by the invading USAmericans. She would sell it to make a living during difficult times. She would buy white rum in 18,93 litres that the men brought to the city in large tin cans. She would divide the rum; one half would remain white and the other half she would colour with a very neutral tea. In tropical rum producing countries, white and dark rum have very distinct uses and they are even drunk differently from one another, so for food preparation people would use white and for drinking and other confection they would use the dark, or if they wanted añejo, she would add only a hint of aroma, but never vanilla!

    i think the high bottle is needed for 2 things ,1 when you have drinks with things you dont want to drink , and its drown to the bottom , 2 when you want to keep it out of oxygen , and the less its wide the less air connect with the drink .

    Tall skinny bottles are to make the cheap stuff appear more clear and the wide bottles are to make it look darker. Manufactures do the same with honey.

    The reason why cheap alcohol is sold in long and thin bottles is because they are more practical for bartenders, they take up less space and are easier to handle, short bottles are hard to work with when going fast because you get less grip and they are harder to reach to from the bar rack.
    Also one thing to know is you don't forgo the aging process with this method, otherwise no distillers would age anything anymore and save tons of money, this is only an infusion and the chemical processes that occur during aging do not happen here because, well, they take time. But nonetheless a good video that shows how to "fix" and make more tasty a bland and cheap product, kudos.

    I've seen your whiskey video too and I know that for whiskey it's important to use oak wood. But could pine perhaps work for the rum? I only have pine wood and I've read that pine wood is not used for barrels because it will not last for many years due to its cell structure, so perhaps it will work for just a few days?
    What do you think?

    I wonder if it would turn out smoother if you pour the rum through a water filter one or two times before adding it to the wood. I'v read in the past filtering removes some impurities in the alcohol that makes one have a hangover. Like a second distillation does. If what you make taste good then no need to add the extra expenses of filtering to the process.

      I've heard that if you filter cheap vodka through paper coffee filters you will end up with a smoother vodka. And that the difference between say, monarch and grey goose is simply the number of times it's been filtered.

      @@Spectacular-cuoredicioccolato Coffee filters will not create a change. It needs to be carbon. The difference between expensive vodka and cheap vodka is first the number of distillations and then the number of times it's filtered. Also, it depends on when the distiller makes the cuts. All spirits when distilled come off the Still in four parts. Foreshots (methanol and toxic). Heads (beginning of ethanol with strong unwanted flavors. Hearts (this is the good stuff). Tails (starts to taste bad again- but, a different kind of bad than the Heads.) You can't filter out the Heads and Tails. You can only get rid of them through distillation. Cheap vodkas will have more of the Heads and Tails to save money. I do pour my spirits through a coffee filter after I take out the wood to capture any small pieces or powder from the wood. Just looks better. Salud!

      Hello! Italian fellow here. "Cuore" means "heart", and "cioccolato" is of course chocolate. So it should mean "chocolate heart" (or heart made of chocolate). About the pronunciation, should be something like: "cuoray dee chioccolato" (😂😂😂), where every "c" should sound like the "c" as in "cut", except the one followed by the "h", which sounds like the "c" in "cheese"

    The bottles are partly just marketing, they look better but its also tradition.
    Rum was traditionally a drink at sea and shorter wider bottles are more stable and less likely to tip.
    The same reason that port decanters traditionally have wide flat bottoms

    Different shaped bottles are a marketing tool to make them stand out from other rums and to add more value. The tall bottles are really inexpensive to buy.
