The Best Little Ramen In Texas: Ramen Tatsu-Ya (Chef's Night Out)

Who would've thought one of the best ramen shops in the country would be in the hot climate of Austin, Texas? We didn't either, but after we arrived at Ramen Tatsu-Ya, our minds were blown. These guys aren't fucking around, dishing out steaming bowls of incredible tonkotsu-style ramen-over 600 a day-to a line of hungry Texans that goes out the door and down the street. We figured that after such a busy day, everyone be utterly wiped and just want to go home-but not Shion Aikawa and his crew. They took us out for a revelrous night that included pork liver pate at Contigo, a 12-course tasting menu at Barley Swine, "Bernet" shots (half Fernet, half bourbon) at Shangri-La, and brisket ramen with dipping pizza-you read that last bit correctly-and some soft-shell crab sliders back at their shop. 7 years ago I watched this video as a newbie in Austin. This video alone showed me the best pizza I’ve ever eaten and of course all the great food Austin had. A lot of the places here have become bigger establishments but man I’ll always remember these moments and places before they “blew up” Thank you Munchies/ VICE!!

This is why i love my city, the food is always amazing no matter where you go.
I was a pescatarian for 15 years before this place came to town. The Tonkotsu was too much for me to pass on. It was amazing, and I have to say thanks for opening the doors to all the food in Austin that I never enjoyed before!

Ramen Tatsu-ya is seriously the best Ramen I've ever had anywhere in the country, even considerably better than the Japanese chain Ippudo. If you're ever in Austin this place is a must try.

This video, as awesome as it was, still cant do justice to the sheer excellence of Ramen-Tatsu-Ya. It's really the reigning champ of Ramen in Texas. As close to a religious experience as you can get with food

What a great episode! Amazing food, nice people and they went to like 4-5 places before coming back to their own.
One of these days, I'd like to try some of this gourmet Ramen. I was stationed 5 miles south of the DMZ in 1978 - 1979. Korea is the birthplace of Ramen noodles. I lived in a 3 story barracks, and each floor had it's own "houseboy". I think my houseboy was in his mid 40's. He was a really great guy, kept our room, my boots, my locker, my laundry, everything in superb condition. We all tipped him well. He probably made nearly the same salary as the CEO of Hyundai. We took care of Mr. Kim. When I got the munchies, I would ask him to make me some Ramen. It was very plain. Just noodles, an egg, some minced scallions. It cost a dime. A DIME, like as in 10 cents.
Now, since the advent of Ramen noodles in the U.S. , I have put my own spin on Ramen noodles. I've read some negative things on the Internet about Ramen, and that they are unhealthy. POOP. I like plenty of cheese, ham, prosciutto, maybe a handful of frozen peas, an egg (or 2), garlic, and some other goodies in my Ramen. Of course, you would not want them to be your complete source of your caloric intake. That might not be your best choice. But 2 times a week, this is a fantastic meal. some brazed pork or beef, or some crumbled bacon with the noodles is fantastic.
Now I'm hungry!
I love the dipping ramen I need it once a week no lie and the sweet and sour yodas are amazing .... I can’t even describe how much I love this place .
