I do things a little differently: When there's a side wall that close, it's more important to measure and make the jamb parallel to the wall than to make it plumb, or cheat it somewhere in between. I typically use 6 shims on the latch side to try to keep warped casing from changing the door reveal.
i think you do a great job installing this door but have a question.... how often you measure the distance from the wall so that the door does not look off away from the wall..... I say this because i install also and some people think you hung the door wrong when in fact the wall is of.
yes you nail through the shims, and you want to not shim the center on the hinge side as to keep it from getting hinge bound, i would make sure you are 100% level before you nail.
I used screws instead of nails. I figured if I made a mistake, it would be easier to back the screws out and try again than prying a bunch of nails out and possibly wrecking the jamb. But nails can work too.
Why don't to tell that to Tom Silva from This Old House, because I'm pretty sure he knows a bit about hanging doors and that's the way he does it. There is no one right or wrong way to do ANYTHING!!!
Need more talking - explain your process step by step. You were installing shims and nailing without explaining how or why you were doing what you were doing. For the novice it would be GREATLY appreciated and GREATLY helpful to understand why you were doing what you were doing. Other wise it seemed like a pretty decent video. Just needed to add the dialogue to communicate the how & why.

also leave enough room on both sides to accept the full width of your casing saves time later

I am installing exterior door from house to garage. Should I keep door on while leveling and do I nail through shimmy?

Yeah, that'd be why I said "nails can work too." My way was a belt-and-suspenders backup plan in case of an amateur mistake.

you are supposed to screw the frame in with shims after the bracket installation. The brackets are just to hold it square.
I dont even touch the jamb with my level, only the door, then bring the jambs to it..
just put upa fuckn sheet and call it good!
