    Half right, you just need to sprout for a minimum of 3 days (on average) and then HIGHLY digestible. Live sprouts ARE the most healthy food you can eat.

      I'm thinking about let it grow to be a Micro Green .. But in asian tradition, Mung Bean sprouts are said to avoid if the leaves start to come out, I don't know why, but sometime the ancient have wise advices.

      I heard that if you sprouted mung bean and you wait until the leafs turn green, it will be bitter... so that’s why mung bean sprout leafs always yellow🙏

      Hm yeah you think so or know so?? I know it makes seeds and nuts much more digestible, and increases the nutrition by 50-300%. So this is curious to me... Also broccoli sprouts are 100X stronger anti-cancer... This is confusing.

    Ezequiel bread was the WORSE to flare up my IBS and eczema. The itchiness and hardened plaques on my skin were unbearable. I can't thank you enough, Dr Gundry for voicing all this knowledge. I'm following your diet to a T, and as a vegetarian. 🌷

      I've had such a difficult time getting responses to my comments about my adding sprouted grains(to reduce lectins), to a low carb diet, in order to digest food. It's working for me, and I can't understand how people are able to completely avoid grains, and yet digest food. Are you able to? I wasn't able to.

    How do you measure the lectin content? Is there a scale of say 1 to 10? Is there a lab procedure to analyze lectin content? What tools are used? Microscope, chemical analysis ? Has anyone published a report showing the lectin content of common foods?

    Following Dr. Gundry’s diet now for a month (I’m a CRNA and I totally respect Dr. Gundry’s evidence-based approach-he’s a genius to me!)...wow!! Feel better already..got my geologist BF onboard and we made “Not Bad Pad Thai” last weekend and this weekend we will cook together “Eggroll In A Bowl”.. Thank you thank you!! 😄👍🏽🙏

      I thing the doctor is missing an important food group- grains.     Why does the rest of the scientific world seem to think sprouted foods are better for you? I wish Dr. Gundry would cite credible references for his claims.

      I have read that sprouting grains does reduce lectins, in most of the posts I've seen. How else are you going to be able to digest foods if you can't have any grains at all? I tried, and I couldn't. He's full of cr'p, I think. Just out to make money off his claims. I've been eating a low carb diet with sprouted grains added to it, and I've been digesting, now. And my illness is slowly fading.

    - does pressure cooking sprouted grains destroy the lectins in them or do the lectins still remain

    Hello Dr Grundy, I find your research very interesting. I m a biologist my self. What’s your thought on “native Americans”who lived here longer than 8000 years BC ( I’m Latino with Spanish and quechuas mix ). Any study that would indicate “natives” adapted to digest better corn, beans potatoes and other food my ancestors ate?

    Damn. So all the mung bean sprout recipes in Korean food are a no. What about if cooked in a pressure cooker?

      Actually mung beans are ok.. but only in moderation for most people (who aren't very lectin intolerant).
      And it's better to test your sensitivity.
      Dr Gundry's website:
      " It appears that mung beans, when they’re sprouted and have reached a fairly long stage, their lectin content does decrease, so if you want to eat mature sprouted mung beans, they’re probably safe, but I test people against mung beans, and quite frankly, a large number of people who are lectin intolerant do react to mung beans. "
