What Is Ezekiel Bread and Is It Healthy?

In contrast to most commercial breads - which consist primarily of refined wheat or pulverized whole wheat, plus added sugar - Ezekiel bread is made of several different types of grains and legumes, and no added sugar.
But the biggest benefit of Ezekiel bread is not just its blend of ingredients, but rather that its ingredients are sprouted first.
Sprouting, which is soaking the grains in water and allowing them to germinate, causes a number of biochemical reactions in the grain.
This has two huge benefits: It increases the amount of healthy nutrients, and reduces the amount of harmful anti-nutrients in the grain.
    STUDIES: www.ncbi.nlm.nih.gov/pubmed/17..., www.ncbi.nlm.nih.gov/pubmed/11...
Studies show that sprouting wheat may lead to significant increases in soluble fiber, folate, Vitamin C, Vitamin E and Beta-Carotene.
    STUDY: www.ncbi.nlm.nih.gov/pubmed/26...
Sprouting also partially breaks down the starch, which leaves sprouted grains with slightly less carbohydrate.
Sprouting grains can also increase their content of the amino acid lysine, which is a building block of protein. Combined with the addition of legumes, this increases the protein quality of Ezekiel bread somewhat.
Sprouted grains also have lower amounts of anti-nutrients, which are substances that inhibit the absorption of certain beneficial nutrients.
Phytic Acid is a substance found in grains and many other foods. It can bind minerals like Zinc, Calcium, Magnesium and Iron and prevent them from being absorbed.
Enzyme inhibitors are present in seeds, which protect them from spontaneously germinating but may also make the nutrients in them harder to access. Sprouting inactivates some of them.
Sprouting also reduces the amount of gluten in the grain, a protein that many people are sensitive to.
I should point out that it still contains gluten though, so Ezekiel bread is out of the question for people with celiac disease or strong gluten sensitivity.
So there you have it, if you’re not on a carb restricted diet and not gluten sensitive, then Ezekiel bread can be a healthier choice to commercial bread.
But remember at the end of the day, Ezekiel bread is still bread. For optimal nutrition, you may be better to cut down on bread and other processed foods altogether.

2 years ago I started my journey of giving up grains, sugar and all processed food. It was the best decision I have ever made! I used to be anti-grans, but upon further research, I found out that the idea that whole grains are bad is not only lacking, insofar as scientific evidence is concerned, but actually, the healthiest, long-lived people with lowest rates of disease tend to have higher intakes of whole grains. Sprouting just makes them so much better, nutritionally speaking. And easier to digest. Eziekiel bread is the best bread you can get and is so amazing when you do not have time to make bread or other sources of grains and need something in a pinch without sacrificing health.

@@rafael55 Then you’ve done some shitty testing, mate… Glucose can spike for a lot of reasons. If you’re on a keto diet and suddenly first thing in the morning eat a piece of bread then yes, your glucose will fly through the roof. Same thing if you’re used to eating a lot of sugars, then if you eat a piece of bread your glucose will barely spike at all. Bloodsugar will behave differently depending on how your body digest sugar. You can’t use a personal glucose test as a factual measurement for GI.

Ezekiel bread is a common bodybuilding staple. Jay Cutler is big on it. Using sprouted grains means it is tolerable by most who normally eat gluten-free. I use Angelic Brand Sprouted Grain Breads (Wisconsin). Only 60 calories a slice, high in fiber and you can pronounce all the ingredients. I never liked heavy grain breads which sprouted breads are not. If you are going to have any bread "sprouted" is the way to go.

I recently tried eating one piece a day of the Ezekiel Bread with breakfast every day. I liked the nutty flavor and texture, though I suffered ever increasing shoulder and neck pain, getting worse each day, until I realized the culprit. I believe that it's probably the high amount of wheat germ lectin in this bread that causes problems for me. I usually have a piece of good quality white sourdough bread with breakfast, which seems to agree with me fine, so it's not the gluten but the large am't of wheat germ in Ezekiel Bread. It would probably be ok for me to have a piece once in awhile but def. not every day.

Patrick Reilly I got used to it. In sandwiches I use olive oil and a red wine vinaigrette to jazz up the sandwich, toasting the bread helps. I’ve learned to appreciate this bread even as toast with non salt butter. It requires getting used to. The reason one’s first impression is that it tastes like cardboard is because of the amount of sugar in other breads. The polar opposite is like having a chocolate muffin in the morning thinking that it’s heathy because it’s a muffin. No, it’s cake! 😂

Check the ingredients on the bread that you now like. You will find excessive salt and / or sugar. Eat Ezekial bread with something tasty, like avocado or hummus. Then the flavor is not an issue. My favorite sandwich is tempeh, mustard, and roasted red bell pepper. You can find jars of the peppers in many stores.

And the rest of the starchy carbs still convert to blood sugars because they aren't sprouts. Gluten is not the only problem with bread -- starch remains the major problem that still converts to blood glucose along with the glyphosate used to harvest wheat through defoliation of the plants. Everyone will eat what they want but I eat no wheat at all. Way too much bad stuff there these days to suit me, sprouts included.

    • @sunnyinrtrx7247
      @sunnyinrtrx7247 Před 6 lety +4

Wheat is a grass, and the grain is the seed head -- it's been hand-threshed at harvest for a few thousand years -- our ancestors didn't strip any "foliage" to harvest their wheat. I've farmed wheat commercially -- and organically -- all my life, and have neighbors who farm it conventionally. NO ONE uses glyphosate on wheat -- it's completely unnecessary and would be far too expensive if it were, wheat prices being what they are. The only thing conventional growers add is nitrogen, while I add clover to the field to supply that nitrogen naturally, and it's far cheaper, too, since the clover re-seeds itself. You must be thinking of cotton, which needs to be defoliated to harvest if it's not grown in a climate that allows that to happen naturally as part of its life cycle. Across most of the southern U.S., glyphosate's unnecessary for cotton.

There is some appropriate nutrition information in this video but it seems like a a fairly blatant product endorsement overall. There are many sprouted grain breads that may be a better choice for many people as they do not contain any wheat product - which has been shown to be a problem. If you are being paid to promote a particular brand then your information will be biased and should be revealed. I've followed Authority Nutrition for a while now and am mostly impressed with your info - I hope you maintain focus on research-based data and not give in to product/branding pressure.

I ate it for many years. Im almost 53 now. Time to part ways. Still it spikes glucose and has added gluten which is inflammatory.. all that high carb stuff inflames your arteries and over time you get hemorrhoids, bulging varicose veins and later on cardiac events, etc... Time to say goodbye and go with very low glycemic carbs instead, like pistachios or strawberries. Or keto bread if you must and i say do it before it's too late. Damage to your blood vessels is irreversible.
