    As a Swede I can tell you that judging meatballs at different restaurants is like judging the best pub in the UK or finding the best Spaghetti Bolognese in Italy.

      Ordering meatballs in a restaurant in Sweden in not normal. Most of them don't have that except for on the child menu.

    is probably the first time I've seen a CZcamsr eating Swedish meatballs the right way. then we have those who try to make their own, wrong spices, no real cream sauce. forget the lingonberry jam and the gherkins. and no mash. and thank you for liking our Swedish meatballs.

      I have always had them made with färsk potatis rarely mash. You want the full kit and kaboodle. Have this dish around May when the new potatoes are available. Next level. Just boil them and peel them at the table with your knife. Swedish meatballs truly are a swedish experience.

    "A hug on a plate" - that's exactly what Swedish meatballs are. Yes, I've eaten them since childhood, but few dishes are as comforting as this one.

      While I grew up with Swedish food, the best food was made by my finish grandma.
      She could make something as simple as boiled carrots in to an amazing experience haha.

      I almost always prefer a plate of swedish meatballs over fancy food
      Husmankost over the world is usually the best, its a reason why the recipes survives for 100s or years.

    Thank god you went to THE restaurant, in my old neighbourhood, that serve traditional Swedish food with service thats impeccable. Happy you enjoyed it - I miss it alot....

    Home made meatballs with family recipes - you can find so many versions of this all over the country and all are superb, I use my grandmas meatballs and gravy recipe and brought it to the resturants I worked in (educated chef).

    matt i was waiting for you to eventually describe the masg as buttery and you delivered lol, thse meatballs looked amazing i wish to god i could make as good as that because i know exactly what you are saying about texture and all binding they looked wonderful 10/10 for me son woohoo heaven must of burst in your mouth

    Usually it's meat broth in the sauce. It can depend however, as people tend to put their own touch to it.
    Regarding the meatballs, I've heard Swedish top chefs say that it's supposed to be "minced" rather than mashed together. I never understood this and was happy to see the texture of these meatballs looking like the ones I make at home. Many also tend to put onion and garlic into the mix to put some life into the meatballs (or the hamburger-looking version, called "pannbiff").
    I'd say it's hard to decide where the best meatballs are served, in three finer restaurants like this you can get three similar looking plates with a different taste to both meatballs and sauce.

    Ours at home are the best ever!! We use moose meat from local sources. Amazing with Lingon jam I hand picked and prepared on my stove at the cabin. Hands down the best

    About the sauce. The "base" is almost always the "juices" left from the pan after you cook the meatballs. Thats were all the flavours comes from. Its quite simple, mix the all the nice juices from the pan with cream, add some sort of bouillon, salt, black pepper and garlic pepper. I use beef bouillon cubes but you can use chicken aswell. Then you just get the cream to a light boil and keep it there for a couple of minutes while stirring. If needed, add some sort of a binder. You cant it thick, but not to thick.
    About the mashed potatoes, my father taught me that the secret to good mashed potatoes is nutmeg, sugar, lots of butter and cream instead of milk.

      Personally I prefer my mash kinda "dry". Not for every dish but for meatballs definitely. About 10-20g of butter per portion maybe? And maybe around 20ml of heavy cream. It holds up much better to the sauce, because otherwise it just turns to soup. Also not a fan of sugar in it, there's already enough sweetness in the jam and pickles. I haven't tried putting nutmeg in it but that sounds interesting. Nutmeg is definitely a traditional flavor. I just add salt and WHITE pepper. And for the love of God, use mealy potatoes. Using waxy potatoes for mash is an absolute crime.

    That's proper lager beer food (and maybe an Akvavit). Spent too many hours and SEK in this place and their bar back in the day.
    You should try their Grosshandlarmeny (Wholesale Dealer Menue) with all the bevvies straight from the 40's.

    So nice you dig the old school köttbullar with lingon pickeld cucumer and mashed potato or potato puré. The meatballs back in the day was better the smaller it was since that was more work to roll and fry them all, it was considerd lazy to make them to big. Prefellably have two in one bite. The meet is imortant to work hard for a long time to get the right texture

    i have over 30 years of experience of dining at Resturang Pelikan at Blekingegatan i Stovkholm, and i can confirm that they are good when they are good but they change kitchen staff all the time and sometimes it is not great. I would rate them at 5/5 at their best but only 3/5 the other times,but most of the time they are great....Same menue for 30 years for a reson and then they bring in seasson spical dishes aswell that come and go.

    The sauce is probably if traditional, made with the fond of the meatballs at the bottom of the pan it was fried in along with cream and salt and pepper to taste. I have never seen a cream sauce for swedish meatballs made with a stock personally. But my wife is swedish and my mother in law's meatball recipe. Just next level. Honestly the sauce if done correct is definitely the star of the show.

    The ingredient you're looking for is most likely Swedish "ansjovis" and/or "ansjovisspad". It's a common ingredient which unfortunately a lot of restaurants often add too much of and then it tastes gingerbread. But a small amount will improve the dish for sure

    Great place, though it is not the authentic size of our meatballs. They should be about a third in size to be the real deal. /Swede

      The smaller they are the drier they will get, that's why they always are big in good restaurants.

Think a lot of people in Sweden don´t know tosser but could see you where bursting, you did a great job keeping it together 💪😆 At least it was not a salad bar so you had to toss that as well! Would have been to hard to swallow!!

    Its not chicken stock if they made it the traditional way they use the broth from the pan they made the meatballs in gives it a really deep flavour.

    Meatballs is probably the dish that is hardest for a restaurant to beat a good, old homemade version. I've tried them at plenty of restaurants and whilst they're awesome of course, they never scratch the same itch a good homemade bunch :)

    There's one place that used to (not sure they're still around) have the best meatballs in Sweden and that's Köttbulle-Cafét in Göteborg. Nothing will ever come close.

    If i only could eat only one dish for the rest of my life, it would be meatballs.
    Also, supposedly there is an authentic Scandinavian restaurant in London that serves meatballs. Saw a video about it a while back. Never tried it myself so i can't really recommend it, but maybe worth a try if you don't wanna go over here for them if you got the cravings.
    Ps. The sauce is made in the same frying pan after you've fried your meatballs. Might be the meatball juices you tasted.

    As a swede i can tell you,that there is a million types of swedish meatballs that is as delicious as those.For me,its the ones that grandmother rolls the day before christmas.Very basic,very small, 50/50 pork and beef,salt,freshly ground black pepper,and a touch of parsley.I guess im bious,since its an emotional thing.When mormor is gone its not gonna taste the same,whoever tries to replicate them.❤

    I was gonna comment 90g if that what he said about the size of meatballs, that thats to big for swedish meatballs.
    We usualy make then smaller, however they didnt look like 90g and looked great.
    Basicly whats its ment to be not the Ikea version.

      restaurants generally make them a bigger size (presumably to minimize prep time as well as making the dish plate better).

      I actually think "kioskköttbullar" often tastes better than resturant meatballs, the mashed potatoes aswell. You just have to find a good place.
      Best is homemade though.

      Yeah. For one thing restaurants usually refuse to lightly char the meatballs, which when it comes to meatballs is part of the flavour for me. Also i loathe cucumber and pickled food in general. The main trouble with kioskköttbullar is that they usually use really cheap lingonsylt instead of actual rårörda lingon, which is a real minus in my book.

      Yea resturant meatballs are a bit TO soft for me. As you say you need a little bit of char. Alot of places uses to much breadcrums which makes them very soft.
      I hardly use any, or any at all.
      I also prefer a litle bit thicker gravy.
      Im not a big fan of lingonberry.

    Usually people are laughing when speaking about meatballs and that Sweden is known for these even if the dish originally is not Swedish but you guys are not laughing but look pretty serious so, it means there's something and If the particular recipe you are tasting now is pure Swedish, we probably have something to be proud of.. I myself grew up with these and still after 50 years I eat them once a week! 👍

      Of course the dish is Swedish. The people who claim it's not Swedish are the people who will do anything to rob us of our cultural heritage and pride, saying that "this is not a thing, this isn't yours" because some Turk once put together a ball of minced meat 2,000 years ago.
      By the same logic you can't say Beef Bourguignon is French because some Neanderthal might've made a beef stew 300,000 years ago.

      The dish is def swedish. There are several different variants of meatballs depending on the country, thats why its called SWEDISH meatballs. Also the sides is what seperates it also.

    I have mixed emotions about this video, it`s nice that they enjoy the food but having Pepsi with the meatballs is nothing short from being a blasphemy.

      milk is the last thing I would drink with this dish lol. Milk is for cookies and kanelbullar. Pepsi is just fine, I don’t know what the original commenter is talking about. If you want to be real cultural and fancy you could get lingondricka, if you don’t want that but don’t want to offend the gatekeepers you can just get sparkling water. However, there is nothing wrong with having Pepsi or any other soda with this. I say as a Swede myself.

    I would prefer milk or lingonberry “juice” to this dish. And meatball recipes are as many as there are Swedes. I for example like the meatier. But the best part or meatballs is when you are frying them, the small parts that falls off, those are the best parts. It’s like botturas best part of a lasagna.

    We who have a little grey in our hair takes our own meatball recipe seriously. I would say, not two are completely alike. Mine is a result of my grandmas recipe refined over a 40 years timespan and many hundreds of iterations. It is now, unfortunately, impossible to write down My Meatball recipe, it can only be done by my hand so I will take it with me to the grave - but not before teaching the core and philosophy of them to my sons, who in their turn hopefully will refine it even more. Swedish Meatballs are not so much Food Science as it is Food Philosophy. My No.1 Rule is: All must be done by hand if possible, from the lingon to the breadcrumbs. Only then do I know exactly what the result will be.

    Obviously a matter of preference but I've never been a fan of that style of meatballs. IMO should have majority beef with a bit more coarseness than that.
    Calf stock, black/white pepper, garlic, some ketchup and a splash of soy sauce.
    Everything else on the platter looked great.
    Edit: and definitely a bit smaller.

    ive lived here in stockholm for 17 years and always bring my guests here. The Pelikan is known for having writers and authors and journalists etc. Every dish on their menu is the dogs. Nice review chasps

    Been here before, they have good meatballs but homemade are significantly better in almost every respect. Especially as a full meal if you also made all the components at home. Large meatballs are only viable in a restaurant setting because they can make a ton of stock, but traditionally you are meant to make them small in order to get more surface area and create more browning for the roux and sauce.
    I will say though that their skagen is extremely good, and so is their fläsklägg. Also it's not break your bank expensive, an envelope with a drink or two is less than 100 euro.
