    ☆ ABOUT ME ☆
I am a former tech worker who lived in NYC for 30 years. When I reached 50, I set out my own and created a business selling on Amazon using their FBA program. Great fun, but neither career left much time for healthy living.
I turned 60 last year (2023). I found myself 110 pounds overweight and seriously out-of-shape, pre-diabetic, with sky-high cholesterol, and unable to walk for more than 20 minutes without resting.
I decided to make some major changes. I shut down my Amazon business and started living frugally. Health is more important than money, especially as we grow older. In August 2023 I started the carnivore diet and lost 65 pounds in 3 months.
Now I’m hooked! I can walk for miles without a rest now. My cholesterol is within normal levels as is my blood pressure. I am no longer pre-diabetic, and I feel 30 years younger!
After experiencing the benefits, I’ve become passionate about sharing my story to help others.

I am Texas... get the brisket!! lol D quick way to make it not on a smoker or grill: cut 3-4 sections and freeze individually and pull one out per week. use a crockpot on low until tender. This way you won't get fatigue eating the entire thing unless you have a large family.

I've been doing this since I was a broke college graduate in the mid-90s. Brisket was one of the cheapest proteins that money could buy back then. You couldn't even buy ground beef that cheap back then. I found that 24 hours on low was the magic number for a crock pot.

As an ex butcher, you can use the top round as round steak. Cut it across the widest part, so you'll be cutting across the grain. If you imagine the meat as a D cut across the flat part. The thickness is up to your personal taste. You can also use it as a roast, but we always made it into steaks. It's a lean cut, so it can be a little dry.

Anthony I've always been a bit self conscious about different cuts of beef in case I sounded stupid. I know how to make pulled pork but I have no idea what cut of meat I use to make pulled beef. If you have a moment can you please education me on this. The only meat I've eaten is cchickdn breast, home cooked corn beef in the slow cooker and what I called Phillip steak until I was an adult. Thank you in advance for the pulled beef meat cut. 😊

I think that the one-size-fits-all mentality that the medical establishment promotes re: diet is a big part of the problem, especially for those of is who do best on a carnivore diet. It’s an individual thing; and each of us has to figure out what works best for our own bodies.

I throw both chuck roast and brisket in the slow cooker for 8 hours. You can cut larger briskets down to whatever slow cook size you want, and also trim as much fat off the cut as you’d like (if any) before cooking…

The only thing I’ve ever done with beef top round is grind it up to make lean hamburger. I add the fat of my choice which is usually homemade ghee, it’s super easy to make and less expensive. On another note, even is someone is lean, that person can be a type 2 diabetic. I know four people who have never been overweight but have elevated blood sugar.

I shop here in Oregon using the price shopping method instead of the budget. My favorite place to shop is Winco. I wait for a good sale on chuck and buy extra for the freezer. I only buy the “good ones” referring to Laura spath video and how she buys chuck roasts. I also buy chicken legs when they are $.99 a pound and put them in the instant pot for a quick meal of 4-6 legs straight out of the freezer sometimes. My absolute favorite is chuck eye that you can get right off the chuck roast. I freeze them and put them straight into the air fryer cook them for 12 minutes and then stick the probe in. I love the crust on the outside that develops cut in half for 2 meals and add eggs. I also eat sardines, chicken hearts and chicken liver once and awhile. Lots of eggs as they are very inexpensive. I don’t shop on a budget but get my beef, chicken and eggs at the lowest price available and skip them if they are at top price. Stock up at the bottom price. The cheaper dryer or chewy meats can be cooked sous vide for 36 hours and then cut up into steak bites. I’m going to try the brisket $$ as well. It’s a lot of meat to screw up but if cut in 4, I can experiment to see how I like it best. St. Louis style pork is also a good choice at Costco. I think you get 3 whole ribs. Sous vide, or slow roast in the oven and then cook for 1 hour on the smoker and cut in half for a really reasonably priced meal. Save the rest cut in half in the freezer after you sous vide then thaw and smoke prior to eating. Great food for company. Have them bring the sides. You can also get ground beef 73 for much cheaper at winco. Once found a 20lb chub for $20. $30 regular price. I cooked it up and bagged in the freezer but would have tasted better as burger Pattie’s or meatballs with a little egg added to the mixture. I make these up and freeze them for meal variety. Carnivore since Nov 2022 and down 95 lbs. currently stalled so should start fasting. 😅

    • @kam2162

This is how I shop too - I am on a very tight budget. I eat out of the freezer if I can't find any good deals and just save up the budgeted dollars for when I do find a deal. I also stop at the grocery stores when I happen to be going by and check the meat department for clearanced, short-dated meat. I either cook it right away or repackage for the freezer. I have a lot of butter in my freezer. I stocked up during the holidays when it was on sale. I also just bought 12# this week because of a good sale. I bought 4 turkeys as well during the holidays. I've since cooked them, ate for a meal or two and canned the rest so it is sitting on the shelf ready to eat at any time. Of course, I could have frozen the leftovers. Turkey isn't my favorite, but the price per pound was excellent. I don't eat pork so that cuts out an affordable option. I am learning to like sardines...not quite there yet.

First time watching.. enjoyed shopping with you. Ty. As for the skinny people who can eat anything, they’ve possibly got a lot of visceral fat rather than us….who like to display ours 😂 . Or they’ve got a very fast metabolism. I liked your selection. When we say bi weekly in Australia we mean twice a week. Once every two weeks is fortnightly. My second fortnightly carnivore shop tomorrow so I’m a newbie. Your prices are still good compared to ours but I have to remember you’re working with pounds not kilos. Anyway, thanks for sharing. I’ll have to check out your India videos. 😊

Hi Jay... I really admire you for making and sticking to a budget. I guess that is how you could afford a trip to India. I think I will try to make a budget for myself. Discipline is good. I do spend a lot on cat foods and kitty litter as well as my own foods. Did you check that your t-shirts are 100% cotton... you don't want to wear any synthetics do you? I keep trying to get to a Costco but I only had one opportunity to get there since last Autumn... Here I am living in the Salmon Fishing Capital of the World and I could not buy fresh Sockeye Salmon for less than 3 times that price or more. I can't afford any kind of fish here on Vancouver Island. My freezers are near empty. Top round is tough and not very tasty compared to Chuck or Short Ribs. I would rather get a good quality ground beef than Top Round roast. In your video, right beside the chuck roasts was beef ribs and those are one of my very favorites... they taste like short ribs but are less costly and fabulous roasted in the oven low and slow... Try them... you will really love them. I can't believe how cheap meat is in the U.S. a Boneless Lamb roast here is at least Canadian $15.00 per pound.

Top round can be steaks, Swiss steak, cubed steak. It is a bit on the tougher side, but the flavor is great. It does not braise or stew well. Can also stir fry if you don't mind a bit of chewing, though sirloin is better (but still tough). Also, if you get the whole top round you can cut a roast (but it's better fried as steaks). You can buy the gadget that carbonates water and it is much cheaper. If you should want flavorings you can add them.

    Helpful tip with costco,
Frozen grass fed 80/20 is the same price as packaged conventional fed burger meat, you may think when it is thawed in the store it means it is "fresh" but all of that meat was previously frozen as well.

The skimmed milk cultures are so they can ferment the cream before churning it. So, the butter is being made from something closer to sour cream or yogurt than fresh cream.
And, fermentation consumes lactose, so less trace amounts for the lactose intolerant among us.

    • @KyleWitten
      @KyleWitten Před 3 měsíci +1

@@Jaylwoodworth The key thing on the ingredient list was that it didn't list skim milk as one of the ingredients. It listed skim milk cultures. Cultures is a fancy pants word for "live bacteria." So, they are just reporting that the cultures were grown in skim milk before being introduced to the cream. Since there is no fat in skim milk, it doesn't contribute anything to the final product. It is the live bacteria that are the real ingredient being listed.
And, before anyone freaks out over my use of the word "bacteria," not all bacteria is bad for you. Our digestive system depends on the symbiotic relationship that we have with the good bacteria in our gut. That is why after a round of antibiotics, doctors tell you to eat yogurt. It is so that you can reinoculated your system with some of the good bacteria that were killed off by "friendly fire" from the antibiotics.

@Jaylwoodworth you are drastically undereating then. 1-1.5 grams of protein per lb of ideal weight. A 1lb ribeye is about 100 grams. So I'm broad shouldered and muscular eating 2 lb, so you for sure should be eating the same or more than me. If you're still losing, you're likely fine, but when you get to maintenance, you're going to start losing muscle for lack of protein.
