    Most types of Iranian stew, known as khoresh or sometimes spelled khoresht, take hours to prepare and yet more hours to cook. Not this one.
    This Persian celery stew also known as Khoresht karafs is a delicious stew made with celery stalks and herbs.
    This easy Persian stew can be made vegetarian as well
    2 lb celery
    10 oz mints
    16 oz (1LB) Italian parsley
    3 lb boneless lam’s leg
    16 oz basmati rice
    1 large potato
    saffron
    lime juice
    1 or 2 tbsp tomato paste
    4 fresh garlic cloves
    2 tsp salt
    ½ tsp black pepper or to taste
    1 tsp turmeric
    ½ tsp allspice
