Dolma is a family of stuffed dishes associated with Ottoman cuisine, and common in modern national cuisines of regions and countries that once were part of the Ottoman Empire. Some types of dolma are made with whole vegetables, fruit, offal or seafood, while others are made by wrapping grape, cabbage, or other leaves around the filling. Wrapped Dolmeh are known as sarma. They can be served warm or at room temperature.
Dolmeh Ingredients:
2 medium onions
4 garlic cloves
1 tsp black pepper or to taste
1 tsp coriander seed
1 tsp turmeric
½ tsp all spice
20 oz 93% lean ground beef
4 Fl. oz veggie broth or as needed
1 tsp salt or to taste
4 oz dry split yellow peas
10 oz dry rice
3 oz cilantro
3 oz parsley
3 oz fresh mint
3 oz dill weed
1 tbsp dried summer savory plant (مرزه)
2 tbsp dried tarragon
2 oz barberies
grape leaves
Sauce Ingredients:
16 Fl. oz vegetable broth
4 Fl. oz pomegranate molasses
1 tbsp sour plums pure
2 pinches of Aleppo pepper or to taste
1 Fl. oz lime juice
2 Fl. oz olive oil
1 fistful of barberies

Great! We cook it with the same ingredient, but with Yellow split pea ("lappeh") instead of corn.
