    Koobideh Kabob (کباب کوبیده) is one of the most popular and famous kababs that you can find on the streets of Iran. Traditionally, this heavenly Kebab is grilled on the red hot charcoal grill. Koobideh Kabab is the juiciest Kabab, with fantastic taste and flyover of ground meat kabobs. Not only can you find this kebab in any high-end and fancy restaurant and club in Iran, but you can also look for it in any little shacks and café, all over the cities, and any recreation park. Or just by following you’re your nose in search of the source of this most heavenly aroma that fills the streets or any indoor bazaar. This heavenly kabob uses minimal ingredients, ground lamb or ground beef, or a combination of the two, with onions, salt, and pepper. These are the epitome of perfection when it comes to grilling Koobideh Kabab. Koobideh Kabab is served over saffron rice or freshly baked flatbread.     به به عجب نان داغ کباب داغی کارت درسته عمو کورش. اتفاقا کوبیده بدون جوش شیرین اصلا کوبیده نیست جوش شیرین خیلی در طعم و عطر کوبیده تاثیر داره علاوه بر پخت.درضمن جوش شیرین تا یه حدی اصلا مضر نیست.خیلی از نانهایی که مردم روزانه استفاده میکنند جوش شیرین دارن وحتی بیشتر داروها هم درونش جوش شیرین داره.

    How do you make this (1 fl. oz browed saffron)? How much saffron needed? Thanks for the good recipe.

      Just add a pinch of saffron into your glass, and top it up with 2 or 3 oz of hot water.

    Baking soda breaks down the tough parts of beef, used frequently in Chinese dishes. Didn’t know that it helps plump up the kabob shape. Makes sense. I thought bread crumbs was used to give more moist and further extend the amount of ground beef. I was told the cheap restaurants use rice to further extend the ground meat.
    I don’t have a grill. Do you suggest using the oven or pan fry?

      Amount of the baking soda I have used is about 3 grams and weight of the beef and onion is almost 2000 grams. The ratio is 1:700.
      At the same time because I do not remove the onion juice the breadcrumbs observe the juice and will make the kebob a lot juicer.
      Again total weight of ground beef and onion is almost 2000 grams and amount of breadcrumbs is 4 grams. Basically in every 500 skewer of koobideh you can save one skewer. Now you look at the math! What you have heard I am sure you agree does not make that much sense.
