    Mutton Dalcha Recipe In Tamil | மட்டன் தால்சா | Mutton Stew With Lentils | Vanga Samaikalam
    Ingredients:
    For Pressure Cooked Mutton Rib Bone/Bone Marrow Along Dhal:
    Dhal (A Mixture of ½ Cup Mysoor & ½ Toor Dhal) - 1 Cup In Total Soaked 10 Minutes
    Tomato - 1 Medium Sized, Thick Wedges
    Onion - 1 Medium Sized, Half Rings
    Red Chili - 1 Pc, Split
    Green Chili - 1 Pc, Split
    Garlic - 10 Pcs, Split
    Salt - As Required To Taste
    Turmeric Powder - 1 Tsp
    Ginger/Garlic Paste - 2-3 Tbsp
    Mutton (A Mixture Meat & Bone Marrow) - 1 Kg
    Water - 2 Cups
    Cook On Medium Low Flame For 5-6 Whistles. It Is Enough To Cook The Meat Tender And Also Preserving The Marrow Inside The Bone Marrow Without Dissolving In The Mixture.
    Mutton Dalca:
    Oil - As Required
    Cinnamon Stick - A Few Broken Pcs
    Start Anise - 2-3 Pcs
    Cloves - 5-6 Pcs
    Cardamon - 5-6 Pcs
    Fennel Seeds - 1 Tbsp
    Cumin Seeds - 1 Tsp
    Dried Chili - 4-5 Pcs, Roughly Cut
    Onion - 1 Large Sized, Half Rings
    Pandan Leaves - 1-2 Pcs, Cut 4 Inch In Length
    Green Chili - 1-2 Pcs
    Red Chili - 1-2 Pcs
    Ghee - 1-2 Tbsp
    Curry Leaves - A Handful
    Pudina Leaves (Mint) - A Handful
    Indian Eggplant - 1 Large Sized, Cut Into Thick Wedges
    Potato - 2 Medium Sized Pcs, Thick Wedges
    Tomato (1st) - 1 Medium Sized, Thick Wedges
    Carrot - A Handful, Cut Into Small ½ Moon Shape
    Some Water (1st) - To Deglaze The Caramelized Bottom And To Cook The Potato & Eggplant
    Turmeric Powder - 1 Tsp
    Fish Curry Powder - 1 Tbsp
    Coriander Seeds Powder - 1 Tsp
    Cumin Seeds Powder - 1 Tsp
    Chili Powder - 1 Tbsp
    Salt - As Required To Taste
    Some Water (2nd) - To Dilute The Mixture
    Pressure Cooked Mutton (Mutton Rib Bone & Bone Marrow) - Pour Into The Pan
    Yogurt - 1-2 Tbsp
    Coconut Milk - ½ Shell Meat Of Pressed Milk (600 Ml)
    Some Water (3rd) - Add Accordingly Whether You Want A Thick Or Thin Dalca Curry
    Tomato (2nd) - 1 Medium Sized, Thick Wedges
    Long Beans - A Handful, Cut Into 1 Inch Length Pcs
    For Garnish - 1-2 Stalks Of Mint Leaves & Curry Leaves

    But how come it's fish curry powder for meat dalcha? How would you justify that?

      Hi 😄 Thank you for commenting. Dalca is basically a Sambar dish regardless adding chicken or mutton. Typically, we use fish curry powder to make Sambar dishes, for example, like this one Dalca recipe. Fish or Meat curry powder; it's all mix of spice blends. Only fine blend mixture of spices. Nor fish or meat was added to them (spice mix aka curry powder) so technically it doesn't matter what curry powder you're adding when cooking, especially for a Sambar dish because cooking is an art. If you like you can do some experiment as for your curiosity do test out fish and meat curry powder. Some like to use fish, and some like to use meat curry powder. It's all depends on taste and individual desire. I encourage you try out the recipe but do let us know how it tastes if you use meat curry powder instead. Sharing knowledge is an acknowledgment.       Hi Sista.... tried today and I must say it was EXCELLENT! Never tried with fish curry powder before, no smell or taste of fish curry at all only taste like authentic Dalcha 😋

    My first time ever cooking mutton and i tried this recipe out for my husband who loves mutton. It was so awesome that he told me he wants me to make this once a month for him from now on. i followed the recipe exactly but i omitted the yoghurt as i didn’t hv it at home, however it was still unbelievably tasty. We ate it with idli that i had steamed. Thank you for this lovely recipe.

      Hi! This recipe serves about 6-10 people but if you would like to make for 20 pax, I suggest double the recipe. You can also adjust the dhal, mutton and water ratio so that it enough and still tasty to eat. Hope this helps you out 🥰

      Hi! You may cook over the stove dear. Just let it boil for 30+ minutes. It takes some time and gas too. Try yo invest in a pressure cooker. It makes life very much easier.

      Hi! Depend on your preference ye. I would use 1/2 of the Kara Coconut Milk (Small Box/200ML) diluted with some water. If you want a thicker or rich Dalcha you may add 3/4 of the Kara Coconut Milk. Anyway, pressed coconut always taste better but due to certain circumstances box milk is convenient too.
