This video is so good it had to be shown twice in a row 😁
Passer perfekt det til en neve håndvrengte rosiner.
I’m not a chef or Japanese knife guy yet. I’m used to pocket knives and Renaissance European daggers. But I do love fixing dull knives and understand the joy of restoring something old or abused.
Years ago when I was first learning yo sharpen, my close friend had a knife with a chewed up edge. He had loaned it to a coworker who cut metal pallet strapping with it. It was riddled with 1-2 mm divots.
It was so painful to see how wronged my friend was that I spent hours with ceramic stones grinding away to fix it. But weeks of spare time later it was razor sharp. So satisfying.
Your a g for that
Oh man, I know of a secondhand shop in a fishing village in Mie prefecture where my in-laws live. They have boxes and boxes of knives just like this. Literally hundreds of them. I purchased a couple of debas last time I was there for $5-10 each. The ones I chose were made by Masamoto, which I'm familiar with. I'll have to go back on my next trip and try to identify more of them.
Much love from sweden. I am so glad I found you just when I was fed up with my dull knives, learning so much, thanks for sharing what you have learned.
Wow! Now this is a video that I've been waiting for! I've restored 4 Debas already (because the large bevel makes it easy for me to sharpen it) but Im too afraid to grind away materials on my yanagiba because it's very thin. I'll definitely be waiting for all the videos where you restore all of this!
Video so good had to watch it twice
welcome!
Always will appreciate a dude trying to restore quality items rather than letting them rust/rot away.. good job bud .. hope it turns our great 4 u
This gets me pumped Love old knives and tools, especially restoring them
I love the respect you show each blade. Love from England
So good I watched it twice! Will be great to see how you tackle these knives, keep up the great work.
Not sure why this video came up for me… but after 10 seconds I was totally into it and watched it all and subscribed. I’ve loved knives my whole life and every one of these gave me that spark.
Welcome!
I also purchase old Japanese knives on Ebay and then restore them. You save so much considering the quality level of these blades, they may be old but they are real work horses.
Good to see you back. I've been watching for I'm sure at least 6 years since Japan trips. Hope you are doing ok.
thank you for sticking around!
I’m looking forward to seeing all these knives restored. I think I’ll be buying one or two.
lol I had the same idea.. looking forward to see how u handle the rust removal process and the blade chips.. thx for your videos and keep up the great content!
Finaly.....he is back with a new video....make us happy and intreged with new videos...thx Ricky
I do love the idea of restoring old knives. Great video. Hope to see more. Cheers
More to come!
Really cool video Ricky! Glad to see you doing more videos
Thanks! Will do!
New video yessss! Keep it up man, love the content!
Are you more excited during the unboxing,or the fact that you get to restore a bunch of beautiful knives? Thought the latter will require a lot of labor of love.
Looking forward to this series!
that box looks like a lot of "Diamonds in the rough"
thanks for the information you share on your videos: I've improved the edges on my knives, thanks to them.
God bless
Ryky can't wait to see u restore all the knives.👍👍👍🙏
That was a great idea. So great that I got myself few used knives, of course not as expensive. Restoring is the funniest part. Only it will be interesting to be able to connect (a blog maybe) to find what in fact I bought (even if cheap) and exchange opinions on restoration.
Haven’t seen you in a while. Another great vid. Thanks
Good to have you back
I am back
Like so many others pointed out, yes, the one in 3:36 is an Aritsugu(有次), and a very unprofessionally Uraoshi-ed and deformed one at that.
Definitely a nightmare for any of us kitchen knife enthusiasts.
I don't even think it can be properly fixed without using one of the rolling belt thingies.
Also from the absence of the prefix Tsukiji(築地), this is from the OG Aritsugu in Kyoto, not the Tsukiji Aritsugu in Tokyo.
Love your content, man. Greeting from Tokyo.
So many hours of relaxation and zen.
I can't wait to see the restorations! I thought I was trippin out on the reply, all good. Super interesting video 😄🔪
the package reminds me of a great Xmas gift
smiles all around
Amazing! Going to try to win one of these auctions! I suggest that for the knives that lost their kanji due to rust etc., you should add your own!
My wife rolls her eyes every time I watch your videos hahaha.... man, watching you sharpen these knives is like watching a campfire...mesmerizing!!! Cant wait to buy one.
Give her a kiss for me the next time she cooks with a knife you sharpened
Your knowledge and enthusiasm is infectious! Thank you! :-)
Nah. Just keeping it real
Wow.! Very interesting collection of do overs. 😊
I really enjoy your show. I have been in the culinary industry for 30 years and I like the Japanese knives my favorite is the deba. I would really love it if once you restore it throw me a price I would really love owning something that comes from you. I really value and appreciate your skills. Thank you for sharing.
Mariohernandez from Seattle wa. USA
very nice knives , i also buying some old japanese knive here in the Philippines because they're all great
This looks amazing
This will be fantastic to watch
all of them look really cool
Thanks so much for sharing, love your content!
Glad you enjoy it!
Great man. I dont like restoring knives that damaged but it will be interest to watch u do it by handtools,
awesome projects!
New sub here, can’t wait to see you restore them, also just subbed to your website, keen as knife buyer here
Any way I can ask if you have any tips on securing blades in such condition? I want to practice more of the restoration and profile changing aspects. I was just wondering if you had any tips on how another could do the same as you did here just smaller scale. Secure damaged blades fit for restoration and repairs and worth doing so to? Thanks for all your Amazing videos your passion is contagious sir. I’m sure You inspire many, but I know you’ve inspired me to expand one’s self
I bought an old Nakiri from Japan off Ebay for $50.00 just needed a clean up and a good sharpen it is insanely sharp could do with a polishto make it pretty
being left handed makes it difficult to find good second hand single blade knives, Next one I want is a Sujihiki, Will be watching the restorations with interest
hope to pick up some tips.
nice...
I'm digging ur new haircut man. Looks good on u. 👍
I was looking online for knives just like those at time I got the alert for the video. I was only looking for like 1 to 4 knives like this so I can practice on and as a slight cheaper way to get a good knife
love that deeply ground knife that got used well.
yes..
I can't wait to see what and how u go about this
exciting project ❤️❤️❤️❤️❤️
I love his childish excited chuckle when he looks at the knives
Hey Ryky
I like your videos and I have learned so much from them to keep my knives razor sharp
I like to find rusty old knives like those to lvl up my sharpening skils
can you tell me how can I acquire knife like those
grate video kip it up
Can’t wait to see all those knives cutting through paper :)
Looking forward to seeing the restoration vids
on their way!
Good video, can you pls make a video on the satake houcho japanese santoku knife. It is a budget knife for around 30-50 dollars that didnt find any reviews on and I dont know wy because it seems to be a really good knife
Hey Ryky, it's good to see You again. Great video, even though it played two times. I love the idea, to restore old knives and make them useful again.
I was thinking of doing restorations myself. It seems like a good souorce of practise and fun. But I can't find any old japanese knives, to restore. Would You happen to know, where just some guy could be getting old knives from? Thanks for being You Ryky, keep going
Any friends will have plenty of bends and chips for you!
Not sure how you would feel about it, but ebay has people selling random lots of Japanese knives. Might be worth a look. I've considered it myself before.
@@davesmith5656 Yeah, I already do the sharpening and repairing for my friends knives. But, since they aren't chefs like me, or knfe enthusiasts, they only have their run-of-the-mill kitchenknives. And those aren't really that exciting to work on. I do it gladly, but I don't think, it compares to restoring an old japanese knife.
@@johnniemiec3286 I thought the same, about looking on ebay. And it would be totally ok with me. If only, the knives that are available to me, were any good. All the offered knives are pretty mundane, not very interesting, or downright bad. They woulnd't make good gifts, or knives, that would last a long time. Also, they come only from one, or two sellers, who don't give any useful details about them. There doesn't seems to be a great market for old, but still high quality japanese knives, where I live.
@22.50 that takohiki kanji looks like aritsugu to me.
For the special masamoto it's typical for sushi chefs to at that curve at the end for a slicing motion. It's a personal touch someone can add to the blade.
I wish there’s a site where I can pick up some of those knives. I’d like to work on my repairing and polishing skills with higher end knives.
Hi Ricky, these are awesome! It sounds like you are going to replace all the handles? If so, why?? Most of those are as restorable as the blades. Old wood looks much nicer than new ones, once restored. I did some on these type of knives with odies oil and I love the results. Just curious. If lack of expertise is the issue I’d love to collaborate. Thanks for the video
I like octagonal handles, and because these will be restored, it would be a nice upgrade for new owners
Also th magnolia is not really supposed to be the "forever" handle. ???
There will also be a lot of rust in the hole, so reusing them will quickly deteriorate the tang. (I have restored old japaneses knife myself). The hole also need to fit the tang perfectly so water and contaminants cant enter the handle.
This vid. made my day.
Nice, good luck bro.
This is going to be fun....
Hi Ryky. I interested to know where you bought all the used japanese. Hoping I could do some restorarion of my own..... Thanks in advance
Hey I think I know who your friend is! Ive purchased a few knives from him for restoring projects too!
It will be great fun watching you fix those knives up. Of all friends' knives I've taken in to satisfy my hobby, all but two have been more at "repair" than at "sharpening". Three were bent, one had a broken tip (3mm missing), and all of them had chips of varying sizes.
It's a big break from Japanese tradition (but it's not my culture) ..., I learned to use a 3x18 inch common electric sander designed for wood, clamped upside down on a bench, to get chips out and restore tips. It's very quick, 400 to 1K grit progression, leaving a huge burr. Make sure the rotation, and edge, are away from you, and wear eye protection as well as a face mask, and go lightly: do not let the edge heat up.
thanks for the great tips!
great video! Where did you buy the knives? I am currently living in Japan and would like to try and restore and old japanese knife.
Idol, can i ask where you buy those old knives I really want to try practice sharpining japanese knives??
Where can i buy a huge lot like this? It sounds like a fun summer project for me
The deba at 10:20 minute mark, can you tell a bit more about it? steel and maker? (i got the exact same one from an auction)
I gave an antique knife to a knife maker friend who wants to make something similar.well worth the investment in time
Amazing! Where do u buy these old vintage japanese knife?
Oooh ! I want some 😃
there is an issue, it is the same video twice, back to back
. . . so we can view it in stereo
@@ohasis8331 I already have two eyes, I watch everything in stereo
I uploaded a 15 min video....
Is there a place you recommend looking for vintage cutlery like this for someone who wants to get into restoration?
Can you show how to restore the uraoshi on a rusty single bevel knive please
How would you thin an usuba? Trying to restore one
Do you have restoration video on Yanagiba from start to finish?? I would like to see them
Excellent idea for charity and for a lot of other good reasons because, by means of restoration, you show respect for the quality work of the past and making that quality available for future use while, in the process, improving yourself. As observed in the Art of Motorcycle Maintenance: the machine you are working on is actually you.
Well said!
Great video. I subscribed to come back and watch your restorations. Are you not able to make your own handles, or do you not want to mess with it?
Do you have to grind out the pits can’t it be left on the knife to keep its bevel thickness
Son got me a Japanese kitchen knife for Father's day.
There was no paperwork, just a label on the box.
Hatsukokoro
AS Damascus
Kurouchi Tsuchime
Bunka
Any info on this knife? Very handsome piece of work.
Thanks, Bill
never heard of them, but sounds nice
Had such deja vu on this vid.
I just got me an old rusty Santoku from Japan last week. I restored the handle with sanding paper and my own made wax. The blade will be restored soon. I love the idea of restore and keep it alive.
Very nice!
I got really interested in Japanese knives watching your videos. Where could I buy used vintage knives for restoration and later own usage in the kitchen. How to ensure that the knife I buy was of good quality when it was made and a not cheap crap?
I'd love an answer to this question as well!
So nice ! Are yo gonna film the restorations ? I would relly like to get such knifes to try and get better at polishing and sharpening but i don't know where to find some :'[
Oh yes
Where do you get the handles may I ask?
4:00 Aritsugu 有次 it look like aフグ引 Fuguhiki but not sure it from Nishiki Market or Tsukiji market.
The kanji of Masamoto is 正本.
No way!
11:17 i think the diamond tang is a thumb forefinger grip. that’s where i hold that type of knife!
I should have left that part in final edit
22:55 , the one on the left is Masamoto, the right is Aritsugu(有次).
No way! Even better!
Thats an amazing project bucket, I would love try restoring blades like this!! Do you know where I could get a real Japanese Chuka bocha or nakiri to retore i bought 2 only to find out they were fake? I have been trying to find knifes to work on. Is it only me or is the video doubled up? 30min video because it plays twice?
It would be awesome if he could sell some knives that need restored with the kind of skill level it would take to restore them. I would like to buy an easy to restore knife but I bet there are other people that would like to buy a challenging restoration.
Where can I buy the knife damaged from the crab..forgot what is called thanks
i’ll take one of the Nakiri just the way it is.
I want the nakiri - the one with the patina
Hello, you have a 210mm aogami gyuto from HONMAMON in your amaz0n picks.
The very low price of 90$ is very irritating to me and it kinda gives me a feeling of lack in quality or something. On their homepage it’s just 64 bucks.
Would you still recommend it? Please help me, master.
I’d love to own a Japanese aogami knife for my cooking and I live in Germany. Returning a knife would be very difficult for me and I want to be sure. My budget isn’t the highest either but I want to use the knife for several years.
Great knifes. Great video.
I felt like I was in the twilight zone after the repeat lol. I got very confused I thought there was something on with CZcams.
You and me both!
@@Burrfection 😂
I think they're cool/neat.
I would consider the damage character :)
keeping the profile of the knife whose owner ground it way down… big respect for that decision and the words you said on that. wabi sabi shit
Got to keep it real
In a way i envy you having contacts wich can provide you with these beautys. I wish i had 1 (or more) to restore and use
I would love to be able to bid on an unrepaired knife so I could do the work to fix it!
If the handle is serviceable why replace it? Does that not reduce it's antique value?
Where can i buy old japanese knives at a cheaper price? I need bundles
