Japanese Knife Master Hinoura
I am touring Hinoura Hamono knife factory. I get a chance to speak with Tsukasa and Mutsuki Hinoura about their lives are traditional Japanese knife makers. They make some of the best knives in Japan and to be able to sit down with them and get to know them has been one of the great honors of my life. Tsukasa san is one of the few people in Japan who is able to make a knife out of true Japanese Tamahagane. His knives are true works of art and a national treasure.
Hinoura Hamono is a knife-making workshop by Tsukasa Hinoura (日野浦 司) & Mutsumi Hinoura (日野浦 睦), the father and son team. Knifemaking by Hinoura can be traced back to the Meiji era when first-generation Hinoura, Shintaro Hinoura founded the knife forging business. Having moved to Sanjo city in Niigata in 1912, the Hinouras have been making knives there for over 100 years. Tsukasa Hinoura is a very discerning and low profile Echigo bladesmith, who is highly respected by top tier knife artisans in Japan.
As the 3rd generation of the knife forging family, Mr Tsukasa Hinoura almost ended the family tradition when he was a rebellious young man refusing to learn knife forging. However, when his father, Yujiro the 2nd generation Hinoura, fell ill and couldn't forge knives anymore, Tsukasa changed his mind and became a bladesmith. And in the less than ten years, he excelled in every level and his works are greatly admired by artisans in Sanjo, not only because of the beauty of his knives, but also his expression of that artisan soul.
His son, Mutsumi Hinoura entered the lifelong career of bladesmithing in 2001. The talent of knife forging has not escaped the family - in merely 8 years Mutsumi won the highest award for his work at the Seki Outdoor Knife Show. Today the father and son team has been making knives that are highly valued in both Japan and overseas.

    Great to see you back Riki - Hope you do many more of these Japanese visit videos! I like the long format & that it shows you just as you are rather than over-edited. That was a feature of your earlier videos - a very authentic Riki with all his perfect imperfections. Sure - it's a little rough, but that will improve as you do more of them & figure out what to include & what to leave out. You definitely need to do something about the translator - both so you get more out of your visits, and so you have more to share with us. I wonder whether some kind of translation software might help, either on your phone or on your computer afterwards. I'm surprised what a good job Google Translate does with Japanese text, but I'm not sure if that applies to spoken Japanese. Keep up the good work, and I hope to see you again soon! - Tom

    I've seen some people use hot-melt glue (granules), which they fill the handle with, before sliding the blade tang into it, heated as you do... Do you use the same technique?

    23:40s Translator asks if the steel in his hand is very hard. He says that it is not really a matter or being hard but that while "...most steels will melt at about 1,200C, this one will not even stretch at that temperature..." something like that.

    That doesn’t seem to hard to be honest. The cladding is San-Mai in itself and ground at an angle, and cut lengthwise.

    I'd prefer the cutting edge run the entire length. The large chunk of unsharpened steel isn't aesthetically pleasing to me.

    I usually don’t care about pattern-welded steel but master Hinoura’s river jump is just gorgeous piece of steel. I absolutely love the idea behind it: something that can’t be done with a machine.

    Why would anyone buy the nanohone instead of the atoma? The only thing the nanohone can do is flattening stones. Try to repair a chipped knife on that thing.

    There are really cheap diamond plates on Amazon. Like a set of 6 for 20€. I glued them on some plywood because they´re just about 1mm thin and they´re definitely good enough for flattening stones and sharpening. They´re just too coarse for polishing, but that´s where the chosera 3000 comes into play.

    After really watching the video, I can honestly say that I do like the new format. I like the fact that you get a true sense of the feeling and vibe of traveling through Japan and visiting these amazing artisans, because unfortunately I do get the feeling that the true knife maker is a disappearing kind. I would love to see more content of the history of the different makers, their future goals and maybe even a run down of the makers and sharpeners to watch moving forward. The ones trailblazing into new directions, but most definitely also the ones that want to stay true to the old school tradition.

    Flattening stones is important for wood workers but for sharpening kitchen knives not so much. To sharpen a plane iron the stone has to be very flat because it has to take shavings that often are just a few thousands of a mm thick. But even for that, I don´t have to flatten harder stones every time. A King stone, yes but a Chosera, a Shapton or the much harder oil stones will sharpen quite a few chisels and plane irons before they´re not flat enough anymore. All that doesn´t matter much for kitchen knives. The double sided King stone I use in the kitchen has worn about 2mm in the middle now and I´m thinking about flattening it just to make it look nice again. It still works perfectly.

    Anyone can get tamahagane. It is not rare. It is only Iron forged from river ore. Anyone can make it. Sword makers get it from a shrine. But thar is only if you need it certified if you intend to enter a Shinsa competition in japan. Sounds like you believe any bullshit people tell you.

      Documentation seems to be pretty important in Japan when it comes to swords and other important crafted items. Shinsa basically means appraisal. Not being able to be officially recognized as high quality tamahagane probably matters a great deal. Of course, I am not in nor am I very knowledgeable. Correct me if I am wrong with the little knowledge I do know.
