E. Gadd even sets up a shop where he charges 1000 coins for a gold bone or other items. He seems insistent on Luigi getting his ghost collection back while consistently forgetting all about Luigi's goal of saving Mario, Peach, and the Toads. It really makes you wonder.
AND TO BACK OF THAT INFO HE EVEN WANTED LUIGI TO ABANDON HIS FRIENDS. If you want a thought maybe he was gonna ask for the paintings of the characters maybe sell them steal em back then say he wants to help get his friends if we puts a price and then pay king boo 50% of that money. I think E. Gadd is Nintendo's sly way of personifying Big Corporations and how they can affect both sides of the coin.
They (being the Corporations) do not ally themselves with a side or countries, they only follow where the money takes them. They play to both sides as to not make enemies. To be an "asset" to either side if one of them were to be eliminated.
Just my two cents. ;)

Another intriguing detail not mentioned here was also from the scene where Bowser Jr mentions E Gadd giving him the magic paintbrush. What MatPat didn’t mention is when FLUDD repeats what Bowser Jr said its voice sounds surprisingly distressed compared to how it normally spoke in the rest of the game. The way its voice sounded when it said “a strange old man...in a white...coat?” FLUDD having been created by E Gadd and created to fix the problem Gadd created himself must have really been a mind blowing thing for it. Just listen carefully to FLUDD’s tone and the way it speaks about E Gadd

Okay, I actually have another theory pertaining to E. Gadd and Bowser Jr. Let me start off like this:
Where did Bowser Jr. come from? Bowser has no wife. There's no Queen Koopa. And, the ending of Sunshine confirms that Peach is not Jr's mother. Nowhere in any Nintendo game is Bowser Jr. shown to have a mother.
Now, search up "Baby Bowser." Baby Bowser is the grown up Bowser, just at Bowser Jr's age. Comparing the two, they look COMPLETELY IDENTICAL except for Jr's bib. What do we know now? That Bowser Jr. is physically identical to Bowser when he was a child.
So, how does this work? Well, the easiest solution is obviously cloning. But Bowser is nowhere near the technological or intellectual level needed to clone himself. He also doesn't have the tools... You probably see where this is going. Well, E. Gadd DEFINITELY was in contact with Bowser at the time of Sunshine (Bowser Jr's origin). Since E. Gadd supplied Jr. with his paintbrush, is it really a stretch to say that he provided the tech to create him in the first place, using Bowser's DNA? Think about it. Bowser wants to defeat Mario in any way possible. A scientist coming up to him and offering to make him an heir (for a price) who would TOTALLY be able to kidnap Peach this time? Bowser would take that offer. This would also explain why E. Gadd just HANDED Bowser Jr. his paintbrush: he was arming his own little creation. This explains why Bowser might be awkward about his son asking who his mother was, and why he lied and said it was Peach. Now, there's no conclusive evidence, this is just the only theory I could come up with that had no obvious holes. Give it a thought.
i like it but if bowser jr was a clone wouldn't he have the same thought process and intuition as bowser? he's clearly fine with his position as a minion but I doubt a second bowser would act like that

That's true, but he was also able to create a special warp for the boss fight, potentially becoming a time machine himself.
There is actually more evidence to back up this theory in the Luigi's Mansion series. (I apologise if this is a long comment).
In Luigi's Mansion 3 , E Gadd can give you useful items like golden dog bones that save your life or boo trackers.
However, he charges you a lot of money for these items even though Luigi and E Gadd are in times of crisis. Proving even more that he does not care and just wants money. 💵 👻
This second piece of evidence might be a stretch but throughout the Luigi's Mansion series, he shows that he really does not care about the Toads.
In Dark Moon, he literally forgets that there was a second Toad in the Trecharous Mansion and could have sent toads to the mansions despite knowing that there are ghosts there.
In Luigi's Mansion 1, he may have let Mario and the toads into the mansion despite knowing the dangers in the mansion.
In Luigi's Mansion 3, he at one point sends a toad to get a piece for his invention. But he says how the hotel is filled with ghosts and toad has no way of protecting himself unlike Luigi, leading to the toad getting attacked by a ghost.
This further shows his carelessness towards the safety of the good guys.

IMO probably both. As pointed out in the video, he rambled about needing money to carry out his experiments. His "villainous plots" could just be immoral schemes to keep doing what he loves.
It may be a little unfortunate but what real scientists do to get funding is even worse. Ever wonder why certain types of researchers always come to a false conclusion? Ever wonder why the conservative groups always find that video games cause violence or feminist groups always prove the pay gap in spite of every other paper? It's because they don't get paid if there isn't a result proving what the group already wanted to hear, so they twist the data to make it look like what it isn't. Then the media takes the already flawed paper out of context and blows it out of proportion to make even more money.
Science is a great method of getting information about the world, but biased research and shitty reporting makes it look like an absolute travesty of a joke to the outside world; creating science skeptics which deny basic facts if it doesn't agree with them.
Maybe he's not looking for either, and just does stuff, like some force of nature.

We SEE it in Luigi's Mansion: Dark Moon! in the level E-1 "front door key" we can look through the window to see King Boo trap a toad in a painting!! We also see it during the beginning minutes of Luigi's Mansion 3! during the scene where King Boo chases you down, if you mess up, we see King Boo trap YOU in a painting!!!

In dark moon you can view the vault of the amount of money you collected. The vault is in E. Gadd's lab and in the end of dark moon luigi didnt have the money he collected

Here's what I gathered so far. In the beginning where Luigi encounters e gadd, Luigi stumbles across some money. Filled with delight, e gadd says in these exact words: "Even with all the dangers here, I'm sure we agree that money is still important. What's the saying? 'you can't take it with you?' Well I definitely want it anyway!"
This is *completely* opposite of what he said in the first game about money having "no concern for such things". In superstar saga+Bowser's minions he's just jabbering to himself about money in front of people he doesn't even know, but here he says it directly to Luigi's face!! Even Luigi should realize at this point that E gadd isn't acting the way he used to. Its almost like he's slowly descending into revealing the mad person he truly is (kinda like Danerys Targaryan).
If you have any other clues, please reply what you saw

They actually not, an villain is someone who is evil but an antagonist gets in the way of the protagonist.
The villain in a story could also be an protagonist and the good guys are the antagonist because the oppose the protagonist.

Maybe E.Gadd doesn't go for either side he just helps who ever is willing to pay him or do him a favour (like Luigi's Mansion where Luigi clears out the ghosts) he sells tools for the villains to make a mess and for Hero's to fix it

Hey MatPat, this reminds me. Remember that theory you made about the Toads being mind controlled by Peach? Well, you know who has the same soulless zombie-eyes as the Toads? Bowser Junior. This is weird because no other Koopa (other than Lakitu I guess -_-) has those black eyes, not even Bowser, who is literally Jr's father! I think that Bowser Jr, knowingly or not, has been taken over by the mushroom hivemind and is used to spy on Bowser. That's how the Toads always have the advice or equipment necessary to beat Bowser, they're using the knowledge taken from Jr's head to counter his every move.

I know im late to the party, but keep in mind that luigi in luigis mansion 2 has to pay for his upgrades with the money he finds in the mansion. If E Gadd really wanted to restore the dark moon, he would've provided luigi with everything right off the bat. And not only that, many more of E Gadd's useful creations are found in the scare scraper, which he could've given luigi but decided not to. To further prove this point, E Gadd also chose particularly bad spots to pixelate luigi into the level, even when he had access to other cameras that we know work. All to show that E Gadd is doing his best to prolong the chaos while maximizing his profits.
E. Gadd ruined my life by causing SM Sunshine, because you literally can never complete the game. It drove me insane for years.
