I did not like baking it for 325 F (15 mins). It's like 75% of the cookie came out hard and too crunchy for me and only a bit of the inside was chewy. I made another batch of these cookies and baked for 350 F for only 9 mins and came out just the right crispiness and chewiness. 😋 I tried 375 also for 8 minutes and it was good!!

- half a cup of granulated sugar (100g)
- half a cup of light brown sugar (100g)
- 1 egg room temp
- 1 ts vanilla
- Cup all purpose flour
- 1 tbsp corn starch
- Half ts salf
- Half ts baking soda
- choco chips
- Toasted pecans (optional)

Try Sheldon's cookies where you brown the butter and use dark brown sugar next to the regular sugar. OMG

Delicious and super easy to make. Just make sure to leave them on the tray to cool as they will fall apart if you try to get them out of the tray straight away. Once cooled they were the perfect consistency, crisp outside and chewy inside, very impressive, I'll be making these again!

I have a question, I just bought a baking tray, and it was too late for me to notice that it says "electric oven safe", can I also use it in a gas oven? apparently, I use a gas oven. Thank you :)

Hi, I'm from Malaysia. I tried baking yesterday and the cookies turned out really well. My family loves the crispy cookies. The only addition that I made was to add 1/2 teaspoon of coffee powder and 1/2 teaspoon of cocoa powder. Thanks for the recipe.

I made these yesterday and my god.. I can't stop eating them 😍😍 I had some issues with the cookies spreading and the baking times but that's mostly because I have an ancient oven 😅Also I swapped 1/2 cup of chocolate chips with dark chocolate chunks. Thank you so much for this recipe.. I'll be making another batch really soon 😘

Made this yesterday and they were sooo good, but my grandma found the original ones too sweet. We tweaked it a bit and only put a quarter cup each of white and brown sugar and they still tasted good! We didn't reduce the flour which made it cakey but it turned out better for us because apparently (we didn't know this) liked cakey cookies better than crispy ones. Thank you for this recipe. 🧡

These were amazing , but they only harden once I let them cool for a while. For the first batch I kept on thinking it was undercooked because they didn’t harden until they cooled , and I put them in the oven over and over again until I overcooked it. The second batch I did properly and it turned out awesome.

I replaced:
butter with a thawed frozen banana (in future, I will try a very ripe banana, I was too impatient to wait for them to ripen)
mashed the banana with 1 cup of light brown sugar (I ran out of white sugar) - if the banana doesn't cooperate and blend well with the sugar, use a hand-held mixer just to ensure there are no clumps of banana, about a minute should do, just get rid of banana lumps
replaced egg with flaxseed (1 tablespoon mixed with 3 tablespoons of water, set for 15 minutes)
I normally replace 1/4 of applesauce for one egg but I thought the flaxseed would be a better binder as the texture was wetter than when I made this using butter and Anna mentioned too much applesauce could result in a cake-like texture
maple syrup instead of vanilla (as I ran out)
2 tablespoons of cornstarch as I was out of Kuzu (as the thawed mashed banana was not as thick as butter would be, hence I recommend the use of a very ripe banana, not a frozen one to mash with sugar)
I used 1-1/4 cup of cake & pastry flour (as it has salt and baking powder premixed and I want to use up this bag of flour)
1 teaspoon of baking soda
1 cup of lightly toasted walnuts
1.5 cups of dark chocolate chips
and then followed the rest of the recipe instructions

I just made these cookies with sugar reduced slightly. If you're using 70% bittersweet choc I think you can follow the original recipes cos my cookies turned out not too sweet at all. They're tasty but I'm not sure why mine didnt flat out

Tried this recipe following the procedure to the letter and turned out perfect! I wonder if i reduce the sugar will it affect the texture/structure of the cookie?
It definetly will.. I don't think enough to ruin them but they will be different.

Love your show. Love how you explain the recipes and techniques. But, I followed this recipe and my cookies look completely different than yours. I was exact in every measurement. And yet, still flat dense little cookies. Flour volume and weight measurements are so different. Also, the butter that I use must have a huge impact on the outcome. But that never seems to get mentioned. What about the style of cookie sheet, heavy v. Light? These factors must all matter....Any comments?

I just tried the recipe now using exact measurements but my batter seem watery and couldn't form a dough ball.
Wondering what I did wrong 🤔, the only thing I did different from the video was to beat the sugar and butter using a hand whisk till fluffy instead of spatula, is that enough to cause the difference?
Maybe it is because there was to much air in the batter?
That happened with me too so I put in about a tablespoon more flour
You dissolved all the sugar because the butter has melted with all the whisking you are doing. You are supposed to cream or fold if you familiar with meringue) the butter and sugar

Can I skip eggs?
Silly question perhaps, but could you just double the ingredients to make a double batch? I know some recipes you can't do that. Will doubling alter the turn out of the cookie?!
*Tip. To ensure your measured ingredients don't mess up the dough. Just make the dough in batches of one at a time, then tip each batch into a larger bowl, then scoop your spoonful ( I use an ice cream scoop ) onto your baking tray, and continue with the baking instructions. When making cookies, I always treble up my batches so I increase the volume of cookies as they never last... even the crumbs get scoffed.
