All I learned from this video is that Kelsey absolutely LOVES mayo! Love that for her!! 🥰
there's an asian trick when cooking rice. when you put the rice in the pot, level it. then put your finger on the rice, literally on top of the rice, don't push it to the bottom of the pot. THEN, the water you add should be the same level as the first line on your finger. get it?? i suck at explaining. also, use rice cooker. and always clean the rice first. LOVE YOU! (I'm not chinese, korean, japanese, or philipines -.-)

@@powfoot4946 1. Clean your rice. Put it in a plate and look for little black or white stones, maggots, webs with rice grains stuck together etc. Especially in aged rice. Pick them out. You can sift through it too.
2. Rinse off all the starch from the rice. Wash it 2 to 3 times each time replacing with new water.
3. Drain the rice, put it in an electric rice cooker or use pot or pressure cooker on the stove.
4. Level the drained rice in the rice cooker container by shaking/shimming the pot or pressure cooker. Now add water to the rice. When you add water, the level of water must rise above the rice by the first knuckle of your finger. Don't indent the levelled rice surface with finger when checking water level. Just let your finger gently touch or hover over rice surface.
5. Your index finger has 3 places it can bend or 3 lines.
(a). The joint/line where finger connects to the palm.
(b). The joint/line in the middle.
(c). The joint/line just above your finger nail.
6. You want the water level to be above the rice by the depth of your knuckle joint just above your finger nail aka the 1st line.
7. Add salt for savoury dish.
or not if you're using the rice for a sweet dish.
8. If you're using a rice cooker then turn it on, it's automatic. It will let you know when rice is done cooking and also keep it warm for you.
9. If cooking in a pot, set on the stove and cook on medium heat without cover until most of the water is absorbed and cooked off. Once you see just the grains and a little bit of thick water remaining, then turn the heat all the way low and cover it. Let it steam for a few minutes. Open the cover to check consistency and stir it up/ fluff it up with a spoon.
If still looks kinda moist, let it steam with a cover on for a minute or 2. Take the pot off heat when done or the bottom rice will start to stick. Don't let it stick thinking you'll eat the rest of the rice above. 5% of burnt rice at the bottom gives the rest of the 95% rice a bitter smell/taste.
10. For pressure cooker, shut it properly. Make sure the rubber gasket is seating properly. Put it on stove with medium high heat. Once the steam builds up, the steam valve/whistle will let out excess steam or make a whistle sound.
Once you hear the first whistle, turn the heat of stove all the way down and wait for the second whistle/ steam release.
Once it releases steam the second time immediately take it off heat.
Let out all the steam by holding the whistle up with a chopstick, pointy end of a knife or gloves. The steam will burn you if you're not careful. The pressure cooker lid will not open until you depressurize it by steam-letting or letting it cool down. We can't let it cool down to room temperature because the rice will form a rubbery brick and won't be fluffy. Open the pressure cooker after letting all pressurized steam out and while it's still piping hot stir/fluff it with a spoon and let some normal steam evaporate so as not to make rice mushy.
Feel free to ask me in the replies if you have any more doubts. Hope you understand the famous asian knuckle deep technique. (It sounds sexual 😝)

Some more tips.
You can flavour the rice with whole spices or spice powder too. Also, you can add onions, chillies, garlic, etc.
1st idea.
Take a table spoon of neutral flavoured oil in a small pot. Heat it up. Add a teaspoon of cumin to the oil and let it fry on medium low heat for 30 sec to 60 sec. Immediately add half a cup of cool/room temperature water to this flavoured oil. Pour this liquid along with more water to cook cumin rice.
2nd idea.
Finely chop onion proportional to the rice you're making. Half a medium onion for each single person serving so a whole medium onion for 2 people eating. Also need 1 to 2 chilies, cumin, red chili powder ginger-garlic paste made in food processor. Garlic must always be double the ginger. Example 1 cup ginger and 2 cup garlic. Lentils ¼ or ½ the quantity of rice. (Optional: small diced carrots, peas, cauliflower, potatoes, radish, tomatoes, green beans, any and every vegetable that you want to utilize, chunks of meat or poultry preferably marinated for 8 hours)
Important tip: If adding lentils don't add meat/poultry.
Similarly, if adding meat/poultry don't add lentils. It doesn't taste good.
Heat 1 to 1½ tablespoons of oil. Keep heat medium. Slit a hot green chili lenghtwise. Slitting is important otherwise the chili will burst in hot oil and can splash oil droplets on you. Add a teaspoon of cumin too. After 40 secs add the finely chopped onion. Sautee until edges of onion turn golden. Now add a ¾ or 1 tablespoon of ginger-garlic paste until the oil separates. You now can add 1 to 2 teaspoons of red chili powder like paprika or cayenne.
Now add a cup of room temperature water to this.
At this point you have washed and drained rice ready and separately washed and drained lentils ready.(This is the time to add above mentioned optional vegetables or poultry/meat chunks instead of lentils) Level these ingredients in pot or pressure cooker. Pressure cooker recommended. Add the previously made cup of flavoured water mixture and add water till knuckle deep. Add salt and pepper to taste and stir. Then let it cook with the same instructions mentioned in my previous/ above comment.
It would make me so happy if someone makes this and replies to me how they liked it.
Pair this with something spicy, herby and acidic like Italian tomato sauce, curries, pickled onions, pesto, etc.

I would just like to say how comforting it is to watch Kels cooking all her meals and everything isn’t this pristine and asmr thing, but more realistic and even a little messy sometimes. That how most of us cook any ways. Also seen Cody walking around aimlessly waiting for the food to be done. I really love these cooking videos and sometimes I watch them while I’m cooking to and laughing around my kitchen at all of Kels silliness 😌
