In Parks and Rec, whenever Ron was doing Duke Silver, that was actually Nick Offerman playing the saxophone. Ron playing the saxophone was supposed to be dubbed but since Nick could actually play, they didn't have to do that.
What about Paul Dano for Love and Mercy, Andre 3000 for Jimi Hendrix, Jamie Foxx as Ray Charles?

Russell Crowe in Master and Commander, he didn't have to learn how to play the violin for the movie but he did, which is not an easy instrument to learn to play. And he did a beautiful job,! And fit into the movie so perfectly.
Gary Busy in the Buddy Holly Story. I bought the soundtrack in middle school and wore it out. His version of maybe baby is better than the original. Ollie Vee as well.
This is showing my bias with the movie but again, Andrew Garfield literally trained for a full year to give justice to his portrayal of Jon Larson in Tick Tick Boom. Heck, his performance in the 'Why' scene was live and raw in the movie.

Tom Hiddleston played guitar and sang in I Saw the Light. It’s a biopic of Hank Williams and Tom nails Hank’s voice and style. Almost no one saw that movie, which is unfortunate.

They get paid to portray a character a certain way... They need to look and sound the part so just like getting jacked or skinny for a role, learning an instrument is another one of those things they get paid to do. It's probably also likely that they're paying for a professional tutor for some if not all of those hours per day. I'm not saying what they've done is impressive but if any of us who actually play instruments could dedicate the time and money actors do well, we'd be pretty good too. Now compare these guys to the likes of Johnny Depp, Keanu Reeves, Jamie Foxx etc... they're already talented before you give them a part...

Sorry but it was absolutely not all Brody...in a weird way. He was absolutely over dubbed by Olejniczak. The hands you see are Brodys' but the music you hear is not.
And we're really going to entirely ignore THE staple actor/musician film, Once?
Calling BS on the last one. The Pianist's end credits says it was somebody elses hands in the movie
Exactly....even if it didn't, I wouldn't believe for a second it was all Brody anyway. Some of it obviously was, but there's no way the final scene is him, among a few others.
