I created Matcha Mont Blanc for sharing at Christmas gatherings this year. It has a festive Christmas tree look. This delicious treat is made of matcha tart filling, white chocolate ganache, raspberry jelly and matcha cream.
Ingredients for Tart Shell:
40g Butter
40g Icing Sugar
20g Egg
80g Cake Flour
Ingredients for Matcha Tart Filling:
30g Butter
30g Sugar
30g Egg
30g Almond Flour
3g Vanilla Extract
3g Matcha Tea Powder
Ingredients for Raspberry Jelly:
40g Frozen Raspberry
10g Sugar
2g Gelatine
10g Water
Ingredients for White Chocolate Ganache:
50g White Chocolate Buttons
40g Whipping Cream
10g Butter
Ingredients for Matcha Cream:
100g Whipping Cream
20g Sugar
5g Matcha Tea Powder
