The blanching of the garlic is genius. Every time I make 시금치 or broccoli 무침, the only complaints my kids have is the spicy garlic.

How do you keep them storage in the fridge for leftover?
I would have thought "blanched" potato sticks would have been more like 30 seconds or not longer that sixty seconds. Considering how thinly you sliced them, I would say you thoroughly cooked them.

Hi Emily, if u prefer to cook the potato less, pls do. I prefer to cook my sticks for 2 minutes so there is no crunchiness to the potato sticks. (It is important to not eat raw potato.). After 2 minutes of boiling, Il the sticks are still holding its shape.
Again, cook it as little as you wish, if that is ur preference.
I Add some jalapeños and red pepper to give it a zing and stir fry it high heat at end

Best to boil potatoes longer. I just had diarrhea. Wikipedia: Raw potatoes contain toxic compounds known as glycoalkaloids, of which the most prevalent are solanine and chaconine. en.wikipedia.org/wiki/Potato#Toxicity
Sorry to hear ur discomfort. Of course the potatoes need to be cooked. (Eating raw potato is never a good idea.). My instruction are to cut the potatoes into skinny sticks and boil them to a point so that it doesn’t break the stick-shape. When you taste test one of the boiled potato sticks, it should NOT taste raw, but just cooked potato taste in the shape of skinny sticks. (Perhaps, my stove power/BTU being really high, 2 minutes of boiling on high heat might equal to 4 to 5 minutes of boiling on a stove with less fire power/BTU.). Maybe cut the potato sticks skinnier next time or as you suggest, just cook it longer (but not to a point where the potato sticks breaks). Alternatively, u can pan fry the boiled potato sticks for a few minutes with a little bit of oil, before adding the seasoning sauce. Hope u feel better soon🙏
