I've done a lot of compositing stop motion in after effects- I HIGHLY recommend the paint bucket effect. Import your frames as an image sequence, put the paint bucket effect on it. Move the fill point to a spot on the background where the subject doesn't touch (if your moving objects move around a lot you might have to animate the position of the selector). Set the stroke to "spread", enable invert fill, and set the blending mode to "stencil alpha". It cuts out objects beautifully. I used it tons when doing stop motion with table salt, and it was robust enough to composite individual grains with no background coming through

Although it might not fit this specific aesthetic I've discovered some awesome methods recently to smooth out stop motion in AE
Time-warp - can be used to convert low fps animation to a higher, smoother frame rate by guessing the frames in between frames. It can create some strange artifacting but this can usually be fixed with the second effect I'll mention. It's a bit finicky but nothing a little pre-comping can't fix.
Force motion blur - Adds point specific motion blur to your animation just by analyzing the footage. So if a dude lifts his hand- AE wil magically be able to say - ok, let's blur his hand here. It's kind of amazing how much motion blur can add to certain pieces but obviously the current melon boy deservers every frame as crisp as possible :3

6:10 or 13:10 RULE FOR ROTOSCOPING/ANIMATION. DO FIRST AND LAST FRAMES, THEN MIDFRAME. Proceed as such to make all frames. Will make your life 90% easier and many frames will need no correction. Auto tweening will be precise enough.

Extremely helpful. Thank you. This is some of the slickest artwork and tuts on CZcams. I had to crash course learn some thing in AE for a large scale public art project, with almost no experience, and I’m kind of hooked. Excited to explore more and very appreciative of creators like you.

I think you'd get a less shaky turn of the melon if you mounted it on the left side so you could rotate it (with thick wire or stick). There'd be no removing of shadows, just the keying out of the background and the mount.
