Chocolate Soil:
40g Dark chocolate
50g Caster Sugar
3Tbsp water
Pickled Granny Smith apple:
cut/peeled Granny Smith Apples
50ml water
50g Caster Sugar
100ml vinegar
Tuilles:
2x egg yolks
58g butter, salted, melted
53g plain flour + more as needed
57g icing sugar
3g vanilla essence
Date puddings:

Lol this actually wasn't as bad as it looks.

Your sticky date pudding failed because you added the hot date water directly to the eggs and fat which can split the fat and scramble the egg. Add the flour before the hot dates to avoid this from happening.
