ARROZ CON LECHE | Mexican Rice Pudding ❤

- This delicious Arroz Con Leche is thick, sweet and creamy, and it takes me far back to my childhood. This was a dish my mom made often, and always told us it was nutritious and good for us. There are many different variations of this delicious rice pudding, some like it with evaporated milk and sweetened condensed milk and some like it with plain milk and sweetened with sugar of choice. When I make Arroz Con Leche I use whole milk, turbinado sugar (slight molasses flavor) cinnamon sticks, whole cloves, golden raisins and vanilla extract until it's thick and creamy. After serving it, I like to top it with a pinch of ground cinnamon and enjoy it as a dessert, snack or breakfast. This Arroz Con Leche can be enjoyed with your favorite side or enjoyed alone and can be refrigerated for 1 to 2 days. Whether hot or cold this amazing dessert can be enjoyed anytime of the year, but always so perfect on a cold, rainy or chilly day.❤
INGREDIENTS----------------
3 1/2 C. water
1 C. rice (I used Jasmine rice rinsed well)
2 long cinnamon sticks (broke in half)
2 whole cloves (discard before serving)
1/8 tsp salt
3 1/2 C. whole milk
3/4 C. Turbinado sugar (or your choice as needed)
2 Tbsp Maseca corn flour (NOT corn starch) (optional)
1/2 C. water for Maseca slurry
1/2 tsp vanilla extract
1/3 C. golden raisins (optional)

I was just thinking about sweet rice lastnight!!! Mama used to make it quite often in the winter. She would toast bread in the oven with butter and cinnamon, so delicious, wonderful memories of days gone by.

You did it right. Thank you!! I get so frustrated watching people trying to cook Mexican who don't have the tradition behind it. The only thing you didn't do that I do, is I soak the water for the rice overnight with the cinnamon sticks in it, to get every bit of the flavor, then I use that water to cook the rice in and replace the cinnamon sticks with fresh ones . Again, thank you from a grateful New Mexican girl❤
Thanks for sharing l had forgotten about this. As a kid we used to have this for breakfast it was so delicious then and I'm sure it's the same delicious now. I never knew that's how it was prepared.When your a kid your mom would have breakfast ready in the morning and you sometimes don't realize the love that's put into it. Thanks for bringing back good memories.

When I was little we didn't have much to eat but my grandmother would always make me sweet rice as a treat.She would make a huge pan of it and I remember she wouldn't let anyone get any until I had my first bowl 😂... I guess I was her favorite ❤️🤗... She would cook on a wood stove , add hot water to the raisins in a little cup and let them swell up add cinnamon and add sweet condensed milk and a little sugar. We didn't have electricity so she would cover the pan and put it in the back room where it was cold... I will always have this special memories 💞 and this is why Arroz con leche will always be my favorite ❤️🤗! Thank you Grama Carmen for being so good to me...I miss you dearly and love you for eternity!!!❤️
I like raisins in mine, this reminds me so much of my mother and grandmother.
My Grandmother used to make this for breakfast before school everyone would always want second's it keep us full until lunch and she always made us lunch I truly miss her 💞🥀

I made some today. It is a remedy and I had to boil it. But as mine was cooking I checked several videos. Then I saw yours. So I haven't even tasted mine. I have Covid. My taste buds are okay. I had to watch you make it. Because I know Rachel will do it correctly step by step. SEE! I'm a really good cook but you are a master. Maybe you could do a video on Mexican remedy foods. Like menudo. I like mine for breakfast with two slices buttered toast. I put in the bowl thick and pour a drizzle of milk and stir it up. I do make with and without raisins. But I always seem to be out of raisins. Keep up your wonderful Master Class. I just asked God to provide me a home. I never married and now rent a room. I need a home, where I am free to cook and be creative play instruments and have people over and share my food with them.

I like using Arborio short grain rice, like the one used for paella and risotto. It lends an extra creaminess, which I love. In this case, I will not use the maseca flour but I will use coconut milk, evaporated and sweetened condensed milks as well. Thanks for sharing your tips on toasting the spices first.

I make mine not much different than yours although I use 2% milk and about 3/4 of raisins.

Oh just like mom made, we just called it sweet rice. Mom and daddy didn’t talk Spanish to us kids, but if they were talking to each other they spoke Spanish. Lil did they know we could understand some. Wish l was fluent in Spanish.

One of the reason why I don’t make arroz con leche often is because the different milks they use , but I’m a prepare it now with just milk and the tip you just gave to make it creamy “the maseca “ thank you 🙏🏼

Gracias for the arroz con leche....as a child my mom made it, to this day I make it too. These days we have so many convient/short cuts in our foods, pre-cooked, packed, delivery, rarely do I use those easy ways. In my culture there is always the basics...but for the sweet rice theres always can milk, canela, clavo in the armarios....right!?.....your recipe just like mine 👍

I've never done it with Maseca but I do alternate with and without raisins. I love this stuff. I will have to try it with the Maseca.
