ARROZ CON LECHE MADE SIMPLY: Delicious, Easy Recipe for Sweet Rice/Arroz con Leche

  • There's no need to over-complicate Arroz con Leche. The way I make it is simple, using ingredients you probably already have on hand. Yet, it's absolutely delicious. Growing up, we enjoyed "Sweet Rice" as a hot breakfast cereal. Read on for the easy recipe:
    Arroz con Leche/Sweet Rice
    1 heaping cup long grain rice
    3 cups of water
    2 cinnamon sticks
    a pinch of salt (approx. 1/4 tsp.)
    3 1/2 cups milk (preferably whole milk)
    1/2 cup sugar to start (add more after tasting, if you want it sweeter)
    dash of vanilla extract (approx. 1 tsp.)
    *additional ground cinnamon for garnish
    *raisins or nuts are optional
    In large pot over medium high heat, add rice, water, pinch of salt, and cinnamon sticks. Bring to boil, then reduce heat and let simmer on low approx. 15 mins so that the water is absorbed into the rice. Then add in milk, sugar, and vanilla extract and let it continue to cook at a low simmer until rice is fully cooked and you're left with a creamy, somewhat runny consistency. Taste to ensure your level of sweetness and adjust if necessary. Serve while hot, garnishing with additional ground cinnamon.

    As a kid my best friends family made arroz con leche in a big pot. I just remember the smell and looking in the pot with the cinnamon sticks. I will definitely try this recipe

      That's interesting. So you had it as a cereal, too. We spoke Spanglish in my house, so mostly we called it "sweet rice" but we always knew it was "arroz con leche." Thanks for the nice comment.

    Thank you, Marcy! There must be a thousand ways to make this recipe but you were my missing link in re-creating my grandma's version. I just had to use a can of evaporated milk and the rest of the measurement I used whole milk. I also added an egg yolk at the time of adding milk. I never temper-lazy or genius? I beat the egg white into a froth and poured on top of the almost boiling arroz pudding, in a bowl. Lid up and wait 15min for the top to cook through. I miss my gramma so much, so this means the world to me. Thank you soo much.

    Yes, I grew up eating a lot of it….my Mom too would make it as dessert and we all loved it. There were 9 siblings in our family. I learned how to make it but I did not make it consistently so now I forgot how to make it. And yes my Mom would some times include bay leaf and definitely use a can of carnation milk, it was so yummy. You’re video really helped me and first chance I get I will make it again, thank you!

    Hola Marcy, soy una norteña (Las Vegas/SF area) and a lot of your recipes are quite different from what I grew up with, however, *this* looks exactly like how my grandma used to make her rice pudding. I've tried to replicate it for years, and online recipes never helped bc they always had too many ingredients that I know she never used and store bought versions could never compare. I cannot wait to try making this version. 😊 Thank you!!

      I grew up in southern New Mexico, so my cooking is a blend of influences...from Mexican, to Spanish, to even Native American. It's fascinating how a foods can change from region to region. This arroz con leche is a simple recipe, but it's really good. Hope it's close to your grandma's version.

      @@marcyinspired1442 that's exactly how I explain to non-native NMs - that the further south you go in the state, the more Mexican influence you'll see in foods. It all tastes good to me because I can appreciate and anticipate the regional differences. Thank you for sharing your recipes!

    My mom made hers pretty much the way you did except, she used evaporated milk. She would make a big pot of it for breakfast and refrigerated what was left. We would have the cold arroz con leche for dessert. We loved it hot or cold.😊
