Cold leftover soup from the fridge the next day is the BEST.
Ive seen a couple people asking for ingredients.
1.75lb Lean ground beef
1 onion chopped
3 small bell peppers (red, orange & yellow)
2 jalapeños diced. Seeded and ribs removed
1TBS minced garlic
2 15oz cans of rinsed beans (your choice)
1 7oz can diced green chilies
1 14.5oz can diced tomatoes with juice
2qts water
2 heaping TBS tomato powder
2 tsp onion powder
2 tsp garlic powder
2 tsp chili powder
Salt and pepper to taste
1oz dry ranch dressing mix
1/4 cup taco sauce
2 tsp cumin
1/2lb uncooked pasta
Garnish:
Cheddar cheese
Sour cream
Cilantro
Tortilla chips

Great winter soup!
I made this tonight for dinner and it's absolutely delicious! I tweaked it by using chicken instead of beef, black beans and spicy hot sauce. I also used a poblano instead of a bell pepper. Topped with cheese and plain greek yogurt. Yum!

I always toss in chickpeas and black eyed peas in my chili along with the other kinds.... the chickpeas absorb all the flavors and add a nice texture

I am going to substitute the meat for more veggies and a meat substitute. Maybe try quinoa instead of pasta. (I am dieting). I think everything will work well together.

I use my homemade taco seasoning instead of the bullion and cumin and chili powder excetera. I do use a spoonful of the tomato chicken bouillon I keep it very small jar for just things like this.

I had reconstructive surgery that left me unable to eat or speak for several months. I told this lovely lady about this and she RULES my "food porn" file! Save the recipes for when you can eat. I did!
