    MALIBU PINA COLADA
    2 oz/60 ml Malibu Coconut Rum
    3 oz/90 ml Pineapple Juice
    1 oz/30 ml Coconut Cream***
    Method
    1. Add all ingredients to the shaker tin.
    2. Shake with ice for 10-15 seconds to mix mix contents.
    3. Pour into a glass over fresh ice.
    4. Garnish with a Pineapple chunk and fronds.
    *** DIY Coconut Cream
    400 ml Coconut Milk
    375 g sugar
    1 pinch of salt
    Method
    1. Add all ingredients to a saucepan.
    2. Gently heat and stir until all ingredients dissolve and come together.
    3. When the combined ingredients have turned translucent then it is done.

    Finally😭 needed a simple flavourfull recipe for a situation where blenders and fresh pineapple are out of the question. How hard can it be to find a decent tutorial… But thank God, I can prepare with these and just make it on ice. Thank you!❤️

    I’ve only been a bartender for a few months and tonight for the first time someone ordered a piña colada so I quickly came up with 2 Oz Malibu Rum, 2 Oz pineapple juice, and 1/2 Oz of heavy cream, my guest loved it! Unfortunately I had no coconut juice

      In Jamaica we make our Pina Coladas with coconut rum too. Perfect when shaken or frozen

    Hi man..love ur work and a big fan.
    I tried using this recipie exactly as u said but the quantity was so little..barely filled up a medium sized drinking glass..are the quantities correct?

      I am only using a 10 oz glass here. Plus with the ice and dilution it should fill that glass. So depending on the size of the glass you using that could be the issue you are having.

    For cream of cocunut I blend coconut milk (cooking version no addition) and mix it with sweetened condensed milk, just need a stick blender. No heat. SO creamy.

      @@boozeontherocks start at 2:1 of coconut milk to condensed milk increasing if you want it sweeter.

    Hi David, I have made this too your spec exactly. It was delicious, though low ABV. I will be making it again for my wife later on.
    Next weekend, as Barprints suggested, I will make it with a coconut rum I will buy next Friday.

    Could you use the pineapple Malibu instead of the coconut one? Would it taste different?

    How long can the coconut cream last?

      I would use it within a couple of weeks. But mine has lasted for a couple of months. It will separate so you will have to shake before use.

      @@boozeontherocks I have just bought a 400 mls tin of Waitrose reduced fat coconut milk and so do I boil it with sugar? How much? I bought del monte pineapple 100% pure juice as no pineapples! And Malibu!

    Would this be a recipe I can make by the gallon and serve from a dispenser?

      You can do that. But the cream of coconut will separate so you will need to agitate it some hoe. i.s shake it or something like that.
